For years we’ve been banishing evil through our “Exorcism” series. But we decided that for the next beer in the series, what Baxter really needs is some exercise. The Exercising of Baxter is an American Imperial Stout aged in Rum and Port barrels. Notes of dark chocolate and aged fruit blend with rich flavors of roasted malt.

Thick, black and oily with a medium sized foamy dark brown head. Bitter with anise, floral hops, chocolate, red wine, whiskey, dough, malt, cocoa and vanilla. Very long finish. Full body

I have these imperial stouts put away to try and today finally see the first truly cool day of fall. Time to break out The Exercising Of Baxter. I probably have rated more beers from Clown Shoes than any other brewery because they put out so many good imperial stouts. This 22 oz bottle came from the fine people at The Cellar a couple of months ago. I pour hard into my New Belgium snifter to get the head to pop. A nice hazel brown top over a super-dark brown body. The smell is chocolate, dark berries and hay. And a drink, yep, they’ve done it again. Baking chocolate, dark cherries, rye bread, a touch of tobacco. Some booziness, the rum I get, the port, not really. A good bitterness with some burn too. Very good.

Bottle/Fest. A- Booze, cocoa, mild dark fruit. A- Black color, black liquid, brown head. T- Port wine, mild dark fruit, chocolate, caramel, molasses. P- Full body, average texture, average carbonation, balanced finish. O- Fairly complex but also a bit on the simple side. For double barrel aged I wanted a bit more from it. Surprisingly not too boozy or a sugar bomb which is nice, but there was just a bit more needed to take it from really good to really great. All these CS stouts are starting to taste the same.

Bomber from Cap Tap. Pours dark brn/blk with a medium/dark tan head. Aroma of chocolate, rum and burnt malt. Nice! Full bodied. Slick in the mouth. Flavor has a lot of brown sugar, chocolate, dark fruits, burnt ashy malt; the main deal is the rum and wood. Not too sure about port - maybe it's lost in the dark fruit. Drier than I expected; bitter from burnt malt, and maybe the heat enhances that. Heat is present, but pleasant. Very nice.
