This wild ale is a cider and beer hybrid, born from the mutual respect and similarities between Baird & Dewar Farmhouse Cider and our brewery. Last Fall, Zeb Dewar met us at our brewery with a large amount of local, fresh pressed cider apple juice and mature, barrel fermented and aged wild/natural cider. We blended each into oak casks with our spontaneously fermented beer that had been maturing in barrel for an average of 18 months. After 6 months further fermentation in this secondary oak vessel, the beer was transferred and blended, then naturally conditioned in bottle for nearly another 6 months. Nearly three years in the making, we are excited to finally share this effort with you. The final composition is extremely dry and crisp, with earthy mineral elements reminisce of funky Basque cider and the rustic Brett intensity of our favorite Belgian wild ales. True to naturally fermented beer and wild ciders that are made from traditional cider apples and are not back-sweetened, it is not sweet and does not have a massively 'apple-y' character. As with our favorite beers and ciders, the character is predominantly yeast derived, with delicate oak undertones. Complex and evolving in the glass with time and air, we think you'll love it as much as we do!

Bottle from the September DC RB Tasting. Poured a kind of hazy yellow color with a small white head. Aroma was green apples, some juicy, funky notes. Flavor was apple, white grape, some light vanilla notes. Pleasant.

From a 750 ml bottle at the RB DC gathering 9/30/18. It is a clear effervescent golden color a creamy white head. The Aroma is of tart apples the taste is sour with string hints of Apple

From a 750 ml bottle at the RB DC gathering 9/30/18. Pours a mostly clear with a creamy white head. Aroma of tart apples and vinyl. Flavors are moderately sour with some sweet apple notes.

MBCC. Slightly hazy golden with small white head. Aroma is malt, lemon, fruit and tart. Flavour is malt, apple, fruit, lemon, citric, sour and wood.

Thank you! 750 ml. bottle shared. Citrus, small white. Nose is lots of cider apple, low hand soap. Citer, soap, brett, fizzy, lemon, not as funky as I had hopped but a very nice very fruit forward, dry cider apple heavy affair,… Lively carbonation, tasted more like cider than beer for me but a nice one.

Tap@MBCC 2018 Blue Session, Copenhagen - golden pour with a white head. Medium tart fruity with notes of apple, staw, some citrus notes, light funky accents, medium to light body, tart fruity finish.

Keg at MBCC 2018 Blue (session Zwei), 11/05/18. Golden blonde with a decent off white cap. Nose is citric tinged straw, funky, apple core, wooded notes, damp cloth. Taste comprises mellow citric peel, funk, damp hay, light spice, apple core, balsa wood. Medium bodied, fine carbonation, semi drying close with moderate acidity. Ok offering but stuck in 3rd gear.
