This wild ale is a cider and beer hybrid, born from the mutual respect and similarities between Baird & Dewar Farmhouse Cider and our brewery. Last Fall, Zeb Dewar met us at our brewery with a large amount of local, fresh pressed cider apple juice and mature, barrel fermented and aged wild/natural cider. We blended each into oak casks with our spontaneously fermented beer that had been maturing in barrel for an average of 18 months. After 6 months further fermentation in this secondary oak vessel, the beer was transferred and blended, then naturally conditioned in bottle for nearly another 6 months. Nearly three years in the making, we are excited to finally share this effort with you. The final composition is extremely dry and crisp, with earthy mineral elements reminisce of funky Basque cider and the rustic Brett intensity of our favorite Belgian wild ales. True to naturally fermented beer and wild ciders that are made from traditional cider apples and are not back-sweetened, it is not sweet and does not have a massively 'apple-y' character. As with our favorite beers and ciders, the character is predominantly yeast derived, with delicate oak undertones. Complex and evolving in the glass with time and air, we think you'll love it as much as we do!

0,05l from tap at Mbcc Blue Session. yellow lightly hazy color, small white head. smells citric, grassy, flowery, spices, some wine notes, peppery. nice smell. full body, light carbonation, slick mouthfeel. tastes grassy, citric, flowery, light elderflowers, spices, bit herbal, bit lactic. finishes medium dry and lightly sour with notes of citrus, flowery notes and some spices. very nice one, great balance. 7, 4, 8, 4, 16

Nice fizzy-creamy mediumlasting head, cloudy. Aroma is slightly dry sour-ish mineraly, oak, sorrel, berry skin, flowers, apple peel, hay, minerals, unripe berries, apple cores, bark, grass, alcohol, fruit stones. Taste is dry sour-ish fruity, soda powder, apple peel, sorrel, oak, hay, flowers, unripe berries, grass, berry skin, apple cores, fruit stones, mild vinegar. Medium bitterness, dry sour-ish fruity mouthfeel. Nice.

Bottle thanks to Chow. Pours a cloudy yellow gold with medium white head leaving spotty lacing. The aroma is apple, pear, oak, yeast. Thin body, apple skin, lemon zest, oak, nice tartness, very good.

Bottle at Todd's. Pours a clear yellow color with a large white head. A big lemon funky nose. Fresh sour tart apples, woody, sweet lemons, herbal, funky, very zingy zesty lemon and citrus. Quite good. Very deep.

Sample during "Hillary’s Portland to Columbus Beer & Birthday Bash!" on 01/20/2018. Clear yellow-gold color with a medium white head that dissipates steadily to an outer ring. Stringy lacing. The aroma consists of oak, funky yeast, apple, citrus and malt. Medium body with flavors of mildly funky yeast, apple, oak and earthy malt. The finish is dry and effervescent with a funky apple and yeast aftertaste. Good beer all around.
