This wild ale is a cider and beer hybrid, born from the mutual respect and similarities between Baird & Dewar Farmhouse Cider and our brewery. Last Fall, Zeb Dewar met us at our brewery with a large amount of local, fresh pressed cider apple juice and mature, barrel fermented and aged wild/natural cider. We blended each into oak casks with our spontaneously fermented beer that had been maturing in barrel for an average of 18 months. After 6 months further fermentation in this secondary oak vessel, the beer was transferred and blended, then naturally conditioned in bottle for nearly another 6 months. Nearly three years in the making, we are excited to finally share this effort with you. The final composition is extremely dry and crisp, with earthy mineral elements reminisce of funky Basque cider and the rustic Brett intensity of our favorite Belgian wild ales. True to naturally fermented beer and wild ciders that are made from traditional cider apples and are not back-sweetened, it is not sweet and does not have a massively 'apple-y' character. As with our favorite beers and ciders, the character is predominantly yeast derived, with delicate oak undertones. Complex and evolving in the glass with time and air, we think you'll love it as much as we do!

8 3 8 3 17Draft at Carnivale Brettanomysis ‘18. This snakebite is hazy golden with a ring white head. Aroma of dry cellar funk, cobwebs, Geuze like, citrus and fruity notes. Flavour is light moderate sweet and light to moderate sour. Medium bodied with soft carbonation. An excellent snakebite!

Poured from a 750 ml bottle. Aroma is rather fruity with some apple and pear notes as well as some lighter citrus and pineapple. Hints of tropical fruit and apricot. Light green grape notes with some light oak and tannins. Light herbal and floral phenolics. Pours a very clear, slightly dull, yellow gold with a large, pillowy, frothy white head that recedes quite quickly and disappears. No lacing or legs. Flavor has a light sweetness with a moderate acidity. Light bitterness and oak notes with some lighter tannins. Medium light apple.and pear notes with lighter lemon, pineapple and underripe apricot. Faint herbal phenolics. Medium light water notes. Mouthfeel is light bodied with high carbonation. Low astringency and low alcohol warmth. Overall, it's decent but the cider thinned and dried the beer out a bit too much for my taste. Good, complex fruit notes with some light phenolics and balanced oak notes.
