Spruce was brewed together with our new friends Burnt Mill. We stteped locally foraged spruce tips overnight in the brewing water, which we then mashed with Pils, Vienna and wheat malts.

The resulting wort was whirlpooled with Relax hops and fermented with the 6dn house saison yeast strain.

Spruce offers complex floral aromas; the palate reveals notes of clementine peel bitterness, finishing with a mouth puckering dryness.

Huge thanks to Erzengel for sharing! Beer in the glass zippy, small head. Dry malty aroma, shy fruity notes. Starts fine malty, some notes of dry white wine, some interesting herbal notes. Finish well balanced, malty-spicy, still some herbal notes. Interesting one!

Big thank you to Erzengel for sharing! Unclear dark golden in the glass. Sweet sourness fruity smell. Taste is dry fruity, increasing fruity hop bitterness, little medical. Honey smoothness to the end. Wine barrel notes in the aftertaste. Not bad.

Tasting @ Koelschtrinker. Smooth neutral mild beginning. Nice funky sourness with a soft lactic sour body. Easy to drink, herbal spruce parts, fruity funky in the end. Very nice and herbal interesting.

On keg at Bundobust, Manchester. Pours lightly hazed golden with a white head. Aroma: saison yeast, lemon, pine. Taste: fresh citrus, spruce, birch, lemon, banana, grassy. Medium bodied, average carb, light spicy dry finish

75cl bottle @ Chez Sophie Christmas Beer Tasting 2018. Pours gold with a list mist, good frothy white head. Aroma is fresh, lightly sweet saison aromatics, citrus. Crisp and extremely dry on the palate. Very similar to Saison Dupont in character, crisp, dry with a gentle saison sweetness. Not detecting much in the way of spruce unfortunately, though this does seem to appear a little with the yeast at the bottom of the bottle. Otherwise a really well-rounded fresh floral summery saison.

Tap at dynamo bar, belgium. Pours golden. Aroma is saison yeast, birch, fruits. Flavor is sweet and bitter, fruits, more birch, some spiciness. Overall: like juks said: reminds Sauna Session, although it should be spruce in this and not birch.

Keg at six degrees north Edinburgh. Pours golden, nose is pine, spruce lemon, banana, taste is juicy banana, creamy, minty spruce.
