The Kioke is an open cypress wooden barrel produced by Yasuo Yamamoto (Yamaroku Shoyu) in Japan, on the island of Shodo, and is used for the fermentation of soy sauce. Xyauyù was created in Piozzo, Italy, at the Baladin farm brewery, from Teo Musso’s desire to explore the universe of oxidation.
The beer, once fermented and aged for 18 months, is open-air matured inside a new Kioke barrel, i.e. which has never been used for the fermentation of soy. The barrel gives resinous cypress notes and a slightly acidic touch, for a unique aromatic profile.

Hazy brown with off white head - Malt aroma with some spicy notes - Malt body with some dark fruity , and spicy flavours - Malt and spicy flavours goes into the finish - This was good
From backlog. Taster, from Bottle, in The park outside Mikkeller & friends, Copenhagen. Cloudy brown with little head. Malts, hops, yeast, Caramel, toffee, oak, sweetness.

Bottle. Pours a bright mahogany with no head. Aromas of toffee, oranges, oak, raisins and toasted malts. Flavors follow same with additional brown sugar. Nicely balanced with some complexity on the finish. Very good.

100mL bottle pour at Baladin Camden, pours a deep dark mahogany, no head. Aroma is salty, with plenty of soy sauce, toffee, brown sugar, and some red fruits. Flavour is sweet and salty — sweeter than the other Xyauyu variants — with brown sugar, red fruits and of course plenty of soy sauce. I didn't expect this to work, but it sort of does. Sweet, salty, fruity finish. Very nice experience despite how odd it is.

Clear brown appearance. No head. Jammy sweetness. Boozy. Woody. Silky texture. Aftertaste like a sweet tawny Port.

Bottle pour at Open Baladin Rome. Deep orange brown with no head. Intensive caramel, molasses, dried fruit, raisins, figs, prunes, toffee. Flat. Medium to full bodied.

2017 bottle. Orange color with no head. Aroma is caramel, raisins, deep oxidization, soy sauce even. Taste is raisins, vanilla, caramel, sweet but deep. Oily mouthfeel, almost flat.

Bottle. Color: Brownish red, no head. Aroma: Sweet, sirup, dark dried fruit, soy sauce. Taste: Over medium sweet, sticky, oily, sirupy. Sugar, molasses, dark dried fruit, figs, vanilla, soy sauce, caramel, spicy wood. Full body, no carbonation. Warming mouthfeel. A bit port-like with great complexity. Light to moderate bitter. Very complex, well balanced. Very long lasting finish. Great beer to enjoy slow sipping.

Bottled@Beer Hunters, Pori. Amber colour small white head head. Aroma is fruity, some honey, sweet berries and syrup. Flavour is nicely sweet with some rye, honey, toffee and alcohol to it. Delicate and really highly enjoyable. Excellent dessert beer.
