Pas de Saison in it’s most extraordinary form. We just had to give this majestic beer a good rest on 10 YO Calvados barrels. Last brew of the XO version was in 2014 by Brasserie Bours.]

Bottle picked up from www.drankgigant.nl Webshop, Vlissingen, Netherlands.Consumed at home Easter Sunday 4th April 2021, sat outside after a housework blitz and some gardening (planting Gooseberries, Rhubard, Heidelberries), about to start cooking 'stuffed aubergine rolls with melting mozzarella'. We're listening to Bicep - . Pours hazy light/mid amber with a white head. The barrel ageing once again with these guys is very in yer' face, it would appear from my ratings that I am slightly uncomfortable compared to others, but hey-ho, 'horses for courses'. In the mouth the calvados has completely taken over the base beer, it's a little boozy, to be fair there is not much sweetness, dry finish, it's very interesting but I can't say that I am a huge fan.

Bottle. Color: Slightly hazy amber, thin white head. Aroma: Saison yeast, Calvados. Taste: Yeasty, bit boozy, caramel hints, quite strong Calvados notes, overripe apple, tannins, some apple core, some wood and hints of light to moderate tart apple. Dry fruity and bittery finish. Moderate sweet, over moderate to medium bitterness. More fruity bitterness than hopbitterness. Very nice, one to enjoy slow sipping.

Bottle. Golden pour. Aroma of nice boozy apple, malt, caramel, yeast, vanilla, oak and white grape. Taste has dry yeast, boozy sweet apple, booze, vanilla, oak, malt, caramel, white grape and little citrus. I like it, Calvados works well with a saison and enriches the flavor.
