As you might know, we often cross the boundaries between beer and wine — and vice versa. In that sense, this wild ale is no exception.

We made a blend of several barrels of beer with different ages (1 up to 2 years old), which were macerated with different types of grapes — three in total: Olasz Rizling (white), Muscat (white), and a little bit of Kékfrankos (red). The concentration of fruit in this wild ale is high: 425 grams per litre.

In the aroma you’ll find floral notes like roses and elderflower, light strawberry notes from the addition of the red grapes, and a touch of spice and vanilla from the oak barrels. The scent might remind you of a natural wine: funkyness and apple skin. With the first sip you’ll notice the firm tannins this wild ale has. This is a result of the long maceration on wine grapes. Together with a high flavour density and solid acidity, Olasz offers a very wine-like drinking experience.

Note: when drinking it young, we recommend to decant the Olasz well, to open up the aroma — give it some time. This beer is suitable for several years of aging, to balance itself out, and let the tannins soften.

750ml bottle. Tart, funky and heavy with grape juice notes, some berries, hints of oak and wood. Okay.

Review based on the BJCP2015 guidelines (style 28C/29A:grapes). Bottle 75 cl - Batch unknown (BBF 18-02-2030). AROMA: medium to medium-high acetic notes, slight elderberry flower and wood. medium-low barnyard background. APPEARANCE: light amber color and clear with material in suspension. low off-white head with low retention. TASTE: initial medium to medium-high sourness with an acetic profile, followed by low wood, barnyard. medium-low bitterness with a dry finish. MOUTHFEEL: medium-low to low body with low carbonation. slight astringency. OVERALL: a wild beer where the added grapes disappeared on the flavor due to the uncontrolled fermentation and with a distracting acetic profile.

Corked bottle. Old pink color. Grapes, floral notes and oak in the aroma. Sour flavor, oak, floral, grapes. Hint of noble rot. This beer has aging potential. It’s young and fairly rough now.

Bottle @ Hallinghansens and Dolle’s Nation Leagues saturday. Denmark-Belgium, 2020. Pours Hazy deep red with an orange hew. Gentle funk and intense berries. Funk and jam. Dry. Quite tasty and refreshing.

Flaska från Tommie Sjef. Rosaorange klar med vit krona. Sött, något större, viss skjuts från alkoholen, oljig kropp. Druvsötma, drar nästan åt lite oranget vin. Mycket druvstjälk, gula russin, vinbärsstjälkar. Stort och gott.

Bottle, via the online shop. Hazed, dirty dark pink. Fine ring of white. Nose has sour cherry and a load of sweet raspberry. Vanilla and strawberry yoghurt. Touch of balsamic. Leathery oak, and some sweaty funk. Tastes matches up, with balanced out tart and rich sweetness. Smooth and big on the juice. Fine, crisp carbonation. Tart and juicy fruit to finish.

Clear orange to amber beer, small creamy white head, unstable, non adhesive. Aroma: nice, funky, some tannins, bit fruity, wood notes, brett, nice! MF: ok carbon, medium body. Taste: pretty acidic start, some vinegar even, bitter, very sourish, grapes. Aftertaste: fruity, funky, vinegar, bitter finish, very fruity, grapes, some tannins, bitter, more fruity, nice stuff!
