Brouwerij 3 Fonteinen “Speling van het Lot” (Twist of Fate) is a series of small batch experimental brews, barrel maturations, fruit macerations and/or blends.On March 20th 2018, we filled two freshly emptied Vin Jaune barrels of Domaine Pignier with young 3 Fonteinen lambic. The lambic was brewed on March 16th 2017 and was 13 months old upon filling the two barrels. We let the lambic sit for another good year before we bottled seperately. As such, there are two batches of this unblended vin jaune lambic.Taste, savour and experience with the best of friends, old and new.

Pours rather clear, darker yellowblonde. Smell is mushroomy, oxidative. Taste is full, tart, oxidative (mushroomy), wet oak, relatively fullbodied, has a certain bitterness too. Mild acetic acid. OK. Better than version 1, but still I expected much more from the Vin Jaune BA's.

Lambic of one year and a month old aged for another year on vin jaune barrels (Domaine Pignier), likely inspired by the qualitative success of similar experiments by Cantillon; two such barrels were used, and apparently the lambic evolved a bit differently in them so the brewery considers them two different versions, with this second one having achieved a slightly higher ABV for some mysterious, lambic fermentation-shrouded reason (maybe it has to do with the wine crystals being more prevalent in this barrel than the other, but I do not see how…). No real head, just some loose and large, snow white bubbles that disappear in seconds, initially clear yellow-golden blonde robe, hazy with sediment. Aroma of very dry white wine, grape skin, a sulfuric touch, wet curry powder somewhere but subtly so, walnut skin, old dry sherry, damp earth, dried out lemon peel, dry cide, old wood. Dry onset, lots of lactic sourness, apple peel and grape skin aspects, lightly sweetish undertone somewhere, flat carb but sufficiently full, bit vinous mouthfeel; bitter grape skin and a late and deep hop bitter note in the end, with a finish that develops more vinosity and woodiness, with a sherry-like effect retronasally (almost seemingly sweet and liqueurish), paired with a walnut touch (from the vin jaune barrel). Interesting, even if I was expecting a bit more of the vin jaune effect; lovely vinosity and tannic effects in any case, but a tad less intense than the first version.
