Brouwerij 3 Fonteinen “Speling van het Lot” (Twist of Fate) is a series of small batch experimental brews, barrel maturations, fruit macerations and/or blends. This 9th version features a range of strawberry maceration iterations aiming at balancing the
intense fruitiness of strawberries with the subtleties of traditional lambic while minimising the unpleasant phenolic characteristics of the small pits. For this fruit lambic
we barrel macerated sour cherries on a previous barrel macerated strawberry lambic (featured in the ToF IX.viii). The proportion is 70% strawberries to 30% sour cherries, while the final intensity is 462 grams of fruit per liter of finished fruit lambic. Additional maceration
took another 4 months, and while blending, we primed with fresh wort instead of refined sugar.

Poured from a 750 ml bottle. Aroma is fairly fruity with moderate strawberry notes and lighter tart cherry character. Hints of grain and faint oak notes. Light lemon notes, herbal, earthy phenolics and hints of pepper and cinnamon notes. Light tannins and fruit must notes. Pours a slightly hazy, pinkish red with a small, slightly pink head that recedes quickly to the edges and lingers for a bit. No lacing and faint legs. Flavor is somewhat acidic with light sweetness and faint grain notes. Light bitterness and hints of alcohol. Medium light strawberry notes and moderate cherry character. Medium light fruit must notes with some hints of cinnamon and lemon. Light phenolics and earthy, herbal notes. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a decent lambic but the acidity is a bit sharp. The strawberry is rather present in the aroma, but the cherry kind of dominates the flavor.

Corked bottle. Pink color. Strawberry and cherry in the aroma. Sour flavor with oak, cherries and strawberries. Not only fruit, also some freshness and fresh cheese from young lambic. Tasty, aromatic, fruity and refreshing but still complex. Good one.

Flaska från 3F, 18 - 19 blend 47. Rosaorange med vit krona. Fin jordgubbston, vinbärsblad, körsbärskärnor, bra syra som ligger mycket uppe på ytan. Hög kolsyra, kanske något spritsig för att hålla smakerna på plats. Försvinner snabbt.

One of the strawberry and cherry lambic experiments that preceded the new Aardbei / Kriek (released in March), with double maceration (first strawberries, then cherries) and with some lambic wort added to help spark refermentation. Thick and foamy, off-pinkish, opening head on a misty glowing pomegranate-red beer with vermillion hue and ‘stormy’ sparkling raging through the mist. Aroma of lots and lots of actual ripe strawberries, sour cherries of course but less fragrantly so than the strawberries, blood orange, dry rosé wine, old orange peel, redcurrant, sour yoghurt, blueberries, haystack. Crisp, dry, utterly fruity onset, sour redcurrant- and lemon-like aspects around a more ‘fleshy’ sour cherry acidity, fizzy carb, bread-crusty base soaked in crisp lactic tartness and ongoing generous fruitiness, dry sour yoghurt effect, tannic woodiness and late hop bitterish note aided by cherry skin and stone astringency – until that juicy, sweet strawberry aroma returns all the way at the back, functioning as the aromatic alpha and the omega of this beer, but behaving more discreet in between. This must be the very best strawberry lambic I ever tasted – the cherries seem a bit subordinate here, even if they account for most of the colour and ‘fleshniness’ of the whole; this is delicate, complex and incredibly refined, but then I still have the ‘commercial’, finished Aardbei / Kriek waiting to be opened.
