Foxbic was made using the turbid mash method in the style of traditional Lambic producers. The wort was fermented with Foxwhelp juice and cider lees in old oak barrela for 17 months. A true union of traditional cider making and beer brewing techniques.

75cl bottle @ monthly tasting, Chez Sophie, Dec 20. Pours a misty pale gold, good white head. Delicate acidity, bristling thornibess with some underlying wild lees and some defined wild apple notes. Great sipper but I can't help feel it's shining moment is yet to come.

Bottle. Mills online shop. Moderately hazy, pale, gingery gold. Slim halo of white. Nose has apple pomace. Baked apple. Vanilla. Leather. Dusty oak. Some milky, cheesy funk. Smells like an Oliver’s cider, which is fine by me. Taste has a baked apple sweetness first off, turning a little dry, and a little tannic. Some soft bitterness. Smooth on the palate. Very fine carbonation. Drinks easy at the ABV. Lovely bittersweet finish. Very nice.
