Batch 5. Beginning of 2017, we acquired a second set of 21 Oloroso and 7 PX barrels and aged young lambic on them for another year. We lost 4 barrels along the way and we blended 12 barrels for this blend and 12 barrels for batch 6 (blend 50). Average age of over 2,5 years upon release, no backblending. 100% 3 Fonteinen lambic.

Boatloads of sherry, smooth lambic funk, stone fruit, massive oak notes, mouldy barrel. Really outstanding stuff in the barrel department. 4.7

Bottle sampled from decanter at 3F. Hazy golden with white head and a lasting ring of minuscule bubbles. Strong sherry on the nose! Oxidized sherry, light yoghurt, spicy yeast, light matches, sweet grains, bready, light stinky dank funk, lemon, dried apricots, oak. Over medium sour, light sweet and bitter. Solid medium bodied with sparkly carbonation.

14/VIII/19 - 75cl bottle @ lambik-O-droom, BB: 26/X/38, bottled: 11/IV/18 - (2019-1212) Thanks to the Ghent beer crew for sharing today's beers!
Slightly cloudy orange beer, practically no head, unstable, dissipates immediately. Aroma: very funky, lots of barn yard, some honey, oxidized, orange peel, some cabbage. MF: soft carbon, medium body. Taste: very acidic, pretty oxidized, lemony, some honey, more lemon juice, bit herbal, peppery touch. Aftertaste: little metallic, herbal, bit grassy, bitter, vinegar sting in the throat, leaving some tannins in the glass.
