Rustikální a velmi elegantní pivo dozrávané v dřevěných sudech po dobu 3 měsíců. Pivo získává lehkou kyselinu a komplexitu ze zrání, poté jsou přidány čerstvé broskve od místního sadaře. Množství broskví je 400g na litr piva. Po 2 měsících zrání a refermentace s ovocem vzniká Signata. Vzniká komplexní eufonie chutí a aromat. Velmi výrazné aroma a chuť broskví, peckového ovoce s příjmenou kyselinkou a tříslem.

Pale blond colour with light haze. Aroma has nice funk and oak with peach too. Taste has sweet and sour peach.

Bottle at Salon piva. BBD 2024. Thin body, medium carbonation. Med-high sourness, very nice mix of acids, pleasant, rounded. Low bitterness and sweetness. Funk-centered, lots of barnyard character. Rather subtle stone fruits, could not pick peach by myself. Low woodiness too. Overall nicely complex and tasty wild beer.

Bottle at Fenetra. Yellow orange with white head. Strong apricot in aroma. Taste, apricot, light sourness, tanins, light sourness, stones.

Bottled 750ml. -Courtesy of Marko, shared with him and hrabren. Hazy yellow coloured, small white head, peach and mild acidity in the nose. Peachy, fruity, light yeasty and tartish taste with spicy yeasty finish.

Bottle shared with Ogi and Marko, thanks Marko for bringing this from Prague. Hazy golden, small head. Nice fruity aroma, peach, apricot, pit, white grapes, white wine, soft acidity, soft lemonade. Just a slight funky touch. Tart peach or apricot, reminiscing a slightly unripe fruit. Nicely balanced with light malts. Moderate carbonation, light to medium body. Yeasty profile is nicely present. Light finish.

Bottled, probably Malý/Velký, shared with ogivlado and Hrabren. Funky salty apricot in the aroma. Tart juivy apricot taste with a solid dose a funk to match the tartness. This is actually quite tasty!

Wchuj owocowy aromat. Dzikosci moooooze w tle. Troche jak swiezy fou foune, tylko w uscie nie tak fajnie, ale i tak robi wrazenie. Posmaki znow owocowe. Pyszka
