This extremely unsilly beer is a master work of mixed-culture fermentation. The beer was fermented with saison yeast, brettanomyces and bacteria, and then dry-hopped, bottle conditioned, and aged several months in the bottle before release.

Nice cloudy gold body and modest foam, acidic sour yeast on the nose and nothing else. Flavour is more heavy sourness, sharp acidic grain, slight pepperiness. Lingering tartness. Very nice, abv invisible, reminiscent of Belgian sours but a little more rustic.

220ml at the brewery NOT shared with wife as she should be sober with her L, hehe. Appearance: murky golden straw with a white head. Aroma: funky and fruity, sour, some dirty notes. Taste: along the same Iines with harsh weird herbal notes and ascorbic acidit. Overall: well, not sure why others liked or even were impressed by this, nothing spectacular.

Draught at the brewery; 220ml
Cloudy blond colour. Moderate acidity, there's a gentle mix of citrus fruits, with light final astringency, strong yeast character, everything in harmony; the robust body and light residual sweetness really contribute to make this a great Wild beer.

750mL bottle, explodes upon opening, pours a cloudy golden with a small white head. Nose is full of wild yeast, with a really nice brett funky, a rustic saison yeast expression, and some gentle tartness. Flavour is gently tart, with tart citrus, rustic saison yeast, a little funk, and a touch of acetone. Nice complexity from the yeasts. As Oakes says, I could do without the acetone, but it is a well-made beer.

Hazy straw colour, nice head. This beer comes forward with an expressive brett aroma, and sweet pale malts underneath. On the palate, I think the brett dominates. It's quite tart - not as bracing as a lot of stuff out there seems to be, but probably more than I'd like, as a bit too much of the pale malt got eaten. The little bit of pedio on the nose is fine but there's also some acetone in there, and I'd rather there wasn't.
