2020 Monachus XII quadrupel aged on barrel for 90 days. The barrel was previous used for bourbon and had a second use with cognac. When pouring the beer you'll end up with a dark ruby-ish beer, medium head and soft carbonation due to refermentation in bottle. You immediately smell plenty of cognac with a bit of woody bourbon in the background. When taking your first sip, you notice a pleasant, slightly sweet, alcohol heat. The taste buds will be spoiled with caramel, raisins and black fruits. A soft, slightly dry coffee / woody taste when swallowed.

Bottle via Rudy's Bierboom. Bottle 157/350. About 3yrs old by now. Hazy black, small, beige head. Aroma of prune, brambleberry, wood, ruby port, black tea, tobacco leaves, green apple, vanilla. Taste has sour brambleberry & green apple in a toasty & almondy malt body with herbal & lemony edges. Soft earthy hops in the finish, lingering sourish dried fruits, warming port wine alcohol, vague cognac note. Medium body, thin oily texture, average carbonation. Even though this has a suspiciously infected profile, the result is like an 'Oud Bruin' on steroids or something. Still I hope the others in the series are truer to style.

Pours very dark brown, nearly black. Small tanned white ring of foam. Scent is toffee, charcoal, mild oak. Taste is sharp, tart, mild barrel. Red wine. Not really getting the Bourbon or cognac at all. not bad, just not what you expect from what it should be.
