Birth of the Cool was brewed using some techniques we’ve been experimenting with lately. We brewed a minimally-hopped wort and let our yeast and bacteria go to town fermenting it. We then fairly heavily dry-hopped it, this time with locally-grown Sterling hops from the Sartori hop farm in Chilliwack. We then bottle conditioned the beer for a number of months before releasing it. The result is a complex, layered beer with brett funk and herbal hoppiness balancing out a rounded fruitiness, with a nice, tart finish.

Poured from 750mL bottle (bottled 05-05-2020). Hazed gold with small white head. Nice brett funk, mild citrus note in the background, nice balance. Enjoyable.

Bottle from The Gull, North Vancouver
Hazy blond colour, slightly gushing bottle; the head disappears quickly. Aroma of wild bugs, sour, wine, barrels, hint of old cellar, and esters. It's fairly dry but with good body structure; delicate malt base, moderately sour, peppery notes, citrus, some juice; dynamic mix of flavours, and decent complexity. A bit too much deposit in the bottle, ends up being somehow dirty (the last pour). Balanced. Very well made.

Pours with very nice foam, stormy carbonation, softly foggy yellow body. Heavy musty yeast on the nose, hints of chalky grain, soft pineapple, excellent. Flavour is citrusy, soft grain notes, mellow vague pineapple hops. Watery finish. Some very good elements here, getting close to something spectacular.

750ml from the brewery at Matt's amenity room. Appearance: hazy blonde with a white head. Aroma: nice american saison notes, somewhat similar to HF stuff, nice. Taste: moderately acidic, with quite a nice Brett character. Overall: it's not that elegant as Hill Farmstead, of course, but it going that way.

Fairly pale, but a fairly thick head, with a sort of a sharp tartness of front, thin pale malts. Pretty fun.

750mL bottle, pours a cloudy golden blonde with a small white head. Aroma is full of wild yeast, some citrus skins, and stone fruit pith. Flavour is full of young brett, tart citrusy skins, some tanginess, and bready notes. Young brett and citrus tang on the finish. Good stuff.
