In early September, the organic hops we grow on our field 4 miles from the brewery become ready for harvest. Freshly handpicked, the aromas are intoxicating & pair perfectly to our organically grown barley & mixed culture collected from the lees of our family made cider. This year, we split the batch into 3 barrels - red, white & whisky to see how they took on the various characteristics of the oak. The whisky butt has added a vanilla sweetness to the base, which works well to enhance the orchard aromas & flavours.

Bottle from Hoptimism. Appearance - hazy copper. Thin white lacing. Very slightly lively on opening the bottle, lost just a drop. Nose - like funk. Woody but not in a funky way, sweet from the barrel rather. Vanilla and lemon. Taste - properly funky this time. Lemon pith, an edge of green apple but tempered compared to non BA versions. Palate - light bodied, persistent and lightly tart finish. Overall - nice, though I think I prefer the non-BA versions of the vintage saisons

Bottle, gusher alert! Golden color, citrus, oak, vanilla and a hint of whisky in the aroma. Sour flavor with apple, citrus, oak, vanilla and a hint of whisky.

Bottle picked up from Beer Gonzo Webshop, Earlsdon, Coventry and consumed at home Attenkirchen, Sunday 29th March 2020, (Day 12 of self isolating). We had a great cycle ride to Haag an der Amper via Zolling, cooking Pizza in the wood oven tonight and I have made a pistachio ice cream, watching Le Revenant (film). Much like the white wine BA version this pours hazy dark gold with a white head. It is also tangy, sour, and with vinegar notes, also finishing a little dry. It improves slightly as you continue sipping, I'm not sure if that is simply just me getting used to it, but like the other variant it is a little to aggressive for me. I am not really sure what the barrel ageing is adding, it's ok but with two down and one to go, I have been a little disappointed thus far.

Bottle from Hoptimism at home. Opaque pale amber colour with a slight head. Aroma apples, floral and slight oak. Taste tangy sweet to tart. Slight cider vinegar. Crisp body.
