For this Druif, we used Dornfelder grapes from Wijndomein Hoenshof in Hoepertingen, Haspengouw region, Flanders. Dornfelder is a dark-skinned variety, originally from Germany. We co-fermented lambic with freshly-pressed-shortly-skin-macerated Dornfelder grape juice in an oak foeder. We let it sit for four months and blended the grape lambic with some fresh lambic wort for the “prise de mousse” in the bottle. The final fruit intensity is 51,7% of grape juice per litre of Druif Dornfelder. 100% 3 fonteinen.

Bottle shared. Deep dull ruby. Deep dank funk, grapes, more wine than fruit, earthy, oak. Maybe more lambic then earlier Dornfelders from 3F. Nice.

Bottled 750ml (Systembolaget, Vasa Sessions) Dark red colour, small pinky head. Funky, farmhouse aroma with grapes. Light to medium-bodied. Funky, lots of red grapes in the flavour, some tannines, leather. Balanced flavour, very wineous, nice showcase of Dornfelder grapes.

Spectacular: pink flamingo head over deep rich burgundy beer. Deep, deep red wine nose, almost utterly vinous, and to make the picture complete a waft of olive oil heated garlic. Sour, vinous, and again accomplished marriage beer/wine. Tannines, some farmyard but still very clean, dark eating grapes. Bit 'sticky' in the finish, acidthinning and low carbonation. Aftertaste reverts to gorgeous winey flavours. One of the best ever. Yount take care, here's a worthy opponent. Thanks to Don for sharing!
