For this Druif, we used Dornfelder grapes from Wijndomein Hoenshof in Hoepertingen, Haspengouw region, Flanders. Dornfelder is a dark-skinned variety, originally from Germany. We co-fermented lambic with freshly-pressed-shortly-skin-macerated Dornfelder grape juice in an oak foeder. We let it sit for four months and blended the grape lambic with some fresh lambic wort for the “prise de mousse” in the bottle. The final fruit intensity is 51,7% of grape juice per litre of Druif Dornfelder. 100% 3 fonteinen.

Deep purple with a decent pink head. Black currant and some petrol funk. Black currant and some funk with a long finish.

750mL bottle, pours a deep dark purple with a medium purplish pink head. Aroma brings out musty dark red grape skins, lots of vinous notes, and a touch of funk. Flavour is very vinous and musty, with lots of musty dark grapes, vinous notes, lots of oak, and moderate funk. Having just had the Muscat Bleu, the grapes here really exemplify how different the Dornfelder grapes are: much darker, more vinous, and woody. I prefer this one.

Bottle shared at Moor Beer Vaults - Bermondsey. Pours deep blood red with a frothy, pink head. Medium sweet with hearty and balanced jammy berry character, relaxed acidity. Medium bodied with fine, massaging carbonation. Quite clean in the finish, more jammy and tart berries, quenching but restrained acidity. Outstanding. Wildly drinkable for the ABV.

Süffiger, mild säuerlicher Beginn. Rote Trauben, Himbeere, natürlich, rund und süffig - einen vollen Körper hätte ich mir aber gewünscht, der Hintergrund ist mild bis wässrig und lässt das Bier zum Ende hin schnell abflachen. Nuancen von Weißwein, eher kurzer Abgang. Nett - mehr aber nicht. 11/12/12/8/12/11

Bottle thanks to Andrew. Pours a dark purple with small pinkish head. The aroma is strong grape skin, funk, earth, oak. Slick body, jammy, grape, funk, oak, light tartness, enjoyed this.
