We almost forgot about her, but she reappeared in a beautiful way. Grace. It came through our dreams and poured into the present in all its grandeur. She came as a ghost, she appeared from nothing, all black and strong, lovely and lustful. Unforgettable. Our Grace, who changes like a chameleon from year to year - and only a witch can tell us in what phenomenon she will creep us in the future ?!
If we get a little closer to our reality, we are talking about the fourth performance of the season - only every time and never again! - beer, which is presented for this autumn (and winter) with the taste and shape of the Imperial stout style. In a figurative sense, this would mean that it is a strong dark beer with a rich and multi-layered aroma. And indeed, after six months of ripening, all ten types of malt we used contributed each their own piece of the mosaic to the body frame of the mighty Grace.
Ingridients: water, barley malt (Pale ale, Münich, Cara 120, Special B, Cafe light, Chocolate rye, Crystal dark, Golden naked oats, Carafa S III, Roasted barley), hops (Collumbus), yeast
Unpasteurized dark beer.
Recommended serving temperature: 12 - 15 ° C

Bottle. Pitch black, thin and nonlasting beige head. Nice chocolate nose, some mild roasted presence and a bit of vanilla. Hoppy bitterness starts quite strong, gentler chocolate sweetness. No trace of alcohol. Medium body. Nice, though a bit too roasted and sharp.

Best before 28/09/2022, 330ml bottle, purchased at Hipermarket Spar, Vrhnika, Slovenia
APPEARANCE: deep dark brown (not black) whit chestnut and ruby notes under the light, brown sugar like head, not overly lasting
AROMA: surprisingly very restrained roast profile on the nose; a lot of dried fruits like esters like raisins, dates & figs, fruit jam, moderately light sweetness of caramel, toasted bread, brown bread, overly baked bread crust, cooked silky oatmeal, mild impressions of butterscotch and milk chocolate, hints of cherry liquor (very low alcohol presence but mainly nicely hidden), subtle fresh raspberry tartness on the edges, hints of burnt plastic
TASTE: light carbonation, medium body, quite thin for 10.3% abv Imperial stout, a first oily & silky mouthfeel that fades quickly away; very low sweet onset with hints of caramel, no obvious fruity esters as suggested in the aroma; loads of flaked oats/oatmeal, strong and slightly harsh bitterness from roasted malts and Columbus hop; lingering wormwood, chicory, bitter chocolate, black coffee, barley coffee; medicinal notes in the middle before hop & roast bitterness kicks in; soft tartness from roasted malts, no obvious umami presence; low notes of iron/blood, somewhat heavy to drink
OVERALL: aroma reminds a lot of Belgian Strong Dark at first glance but flavors are straightforward old school Imperial Stout with boozy component (not burning hot); lacks in mouthfeel and body for 10% abv IS; needs some fine-tuning to balance out harsh roasted malts bitterness and alcohol;
