Oak Aged Farmhouse Saison. Well balanced with a light lemon-like acidity, notable funk, and a light noble hop character. A blend of two different brews with an average time of 4 months in wood each. Blended together for a further 2 months in stainless steel, and finally conditioned in keg and bottle for 3 months as of package date. A mixture of 2 Saison strains, 2 Brettanomyces strains, Lactobacillis and Pediococcus.

Draft: Poured a golden with white head. Aroma is light grain some tartness. Taste is similar lots of tart forward with a grain finish.

Keg at the Barrel Project, 31/10/19. Almost clear golden with an off white cap that dissipates to edgework. Nose is funk, lemon rind, dusty fruits, herb, hay bale. Taste comprises funk, grass, damp straw, lemon curd, barnyard esters. Medium bodied, fine carbonation, semi drying close. Ok easy drinking sour with a light bretted edge.

Keg, third, shared with Finn at Barrel Project. Hazed golden-brown body, filmy layer, crocheted lacing. Ripe saison fruity nose. Taste mid-tart saison fruits and yeasty fruitiness, woody. Drying, semi tart finish. Accepted. (Bermondsey, London 19.10.2019).

Kwg at the taproom.. A light hazed golden coloured pour with no head. Aroma is lacto sour, tangy apple, musty grape, crab apple. Flavour is composed of semi tart. Wheat, tangy apple, prickly sour, pear, Palate is sharp and tangy, moderate carbonation..

Keg at the Bermondsey tap. Pours lightly hazed yellow with minimal head. Nice mixed ferm funk, melon, light acidity. Medium bodied with delicate carbonation. Quenching finish. Not bad.
