Flanders Red Inspired Sour Ale
Several years ago, we first began developing Red Panda based on our love for Flander’s Red Style beers. The original rendition, brewed over three years ago, was the first beer to age in our Foeder Crafters foeder back in 2017.

After enjoying many beers aged in the foeder since then, in 2019 we decided it was time to bring Red Panda back. Our latest version of Red Panda was fermented in stainless with a mixed culture that promoted flavors of tart cherry pie. Following primary fermentation, we moved this into the onto 400 pounds of Michigan grown Balaton cherries where it rested for many months.

Tap. Pours Quite hazy ruddy magenta, large fluffy, white beige head, great lacing. Aroma is dusty, cherries, tannin, oak. Flavor is light tart, cherries, tannic, dusty. Medium body. Interesting. 5, 8, 7, 4, 15

Deep cherry red body with some strong copper hues, a good clarity and small, beige and pink head atop showing moderate retention to style.
Lots of acidity in the nose with tart cherries, skin, peppery pit and pie meat-like character. Honey-like malts are notable and do balance pretty well, but it’s obviously quite given to the lactic acidity with notes of acetic acid, as well. No alcohol or flaw.
In the mouth it’s full of bright cherry juice mixing well with the strong lacto-acetic punch of sourness. Tight carbonation and a malty, wheaty texture with engaging carbonation. Very well-done and the fruit is lovely, if a bit set apart from the beer yet. Very sour and would like to see if some more deep funk and complexity develops after 4-6 months.

Tap into a snifter showing translucent caramel brown with sparse white foam. The nose shows vinous red wine barrel with a strong vanilla forwardness. The palate is light bodied and lightly carbonated. Highly tart with strong vanilla and light tannic red wine barrel.

Poured into a tulip, the appearance had a dark red color with some soft dark pink hues along the sides. Semi-thick foamy white head leads to gentle dissipation. Subtle sliding lace.
The aroma had an array of funky chewy seedy strawberries, cherries and then some vanilla/pie crust.
The flavor blends the sweet to the tart bite of strawberry/cherry sort of wildness. Vanilla/pie crust tries to balance but settles back a bit more than expected. Nice crisp tart to semi-sweet aftertaste flowing into the finish.
On the palate, this one sat about a light to medium on the body with a nice little kick of semi-funky to tart edge hitting against my tongue. Mild carbonation. ABV felt just as the brewer projected.
Overall, nicely done fruited sour ale that I would love to have again preferably in mid Spring.
