Brett Saison

A delicious combination of Brett D and Spooky Saison yeast produce complex flavours of funk, spice, tropical fruits, and pineapple. This dry saison pours a soft golden colour with bright carbonation.

Weak yellow body and soft foam, smells softly of cider, vinegar, vague musty wood funk. Tastes of good dry grain, musty funkiness, chalky yeast. Surprisingly full and dry but still thin somehow, could be more complex.

A, lightly hazed blonde Saison with a thin lacing white head. In aroma, sweet fruity malt with light Brett, light lactic notes, very nice. In mouth, a nice sweet fruity malt with light Brett, light lactic notes, light Epsom salts, very nice. On tap at brewery.

On tap at The Bakery, pours a hazy pale golden with a small white head. Nose is full of soft brett funk, some rustic farmhouse notes, and a touch of pepper. Flavour is spicy, rustic and biting, with a nice rustic saison yeast, low-to-moderate young brett, and a touch of pepper. Crisp and spicy. Very pleasant, though perhaps the brett hasn't matured fully yet. Good.
