After spending a full year undergoing a long, slow, mixed-fermentation in one of our original, 1936 cypress wood lagering tanks at our new Starkeller sour facility, this beer was transferred onto 6,600 pounds of plums for an additional five months of maturation. Electrik Empress is hazy, cotton candy pink in color and bursts with the fresh aroma of ripe plum skins. It is medium-bodied and fairly dry with a soft lemon-tart acidity combined with the flavor of plums, lemon, and pear. Unfiltered and bottle-conditioned to allow the flavors to further develop, Electrik Empress has a bright fruit character that is a unique interpretation of a Berliner Weisse.

On tap at Hunah Day. Pours a cloudy pink with small off white head. The aroma is strong plum, berry, wheat. Thin body, tart plum, berry, lacto, very good.

Bottle/Fest. A- Funk, mild fruit. A- Pink color, hazy liquid, white head. T- Fruity, mild strawberry, plum, subtle tang. P- Light body, average texture, average carbonation, tart finish. O- All these Noble Star variants all seem to be aged in cypress wood but little difference. This at least had plums which don't seem to add much other than a gentle fruit flavor and a touch more tang. Okay.

Tap at Mutphy’s Law. Hazy dull orange golden with white head. Tart plums, dough, soft wheat, light herbs, soft berries. Under medium sweet and sour. Under medium bodied with juicy feel. Good.

Sampled from the tap at the 2017 Minnesota Winterfest. Pours as murky pink with a white head a that dissipates to the edges. Aroma has notes of light plum, tart berries, earthy wheat and a bit of yogurt backing. Flavor has light sour plum with some earthy wheat and a bit of yogurt.

At Winterfest 2017. Dry and earthy compared to most of their sours. A little fruit, citrus, yeast is noticeable, it looks good with the cloudy orange color. Carbonation is a little light and this is not very sour at all, yet. I think it needs more time.
