The addition of quince during pressing resulted in this highly aromatic, sparkling cider with notes of tropical fruits and a refreshing, pleasant acidity. Fermentation with local wild yeasts and maturation on an oak chip mix give the finish further depth.

20/11/2020. Bottle sample courtesy of danlo, cheers Ed! Pours clear pale gold with a short lasting frothy white head. Aroma of tart apple, quince, vanilla, wood and citrus. Medium sweetness and moderate tartness. Moderate body, oily texture, quite fizzy carbonation. Enjoyable, would have liked it more without so much fizz.

Sample many thanks to Danlo! Pours pale gold, faint mist. Thin white ring atop. Aroma brings distinct quince to the fore, a touch woody. Taste is all about the quince, oily on the palate with tart fresh citrus, woody splinters, with delicate leafy green apple notes. Quite nice.

330ml bottle from Kertelreiter. Slightly hazy golden colour, white foamy head that dissipates, and aroma of straw, apple, quince, some funk. Taste is tart, tangy, apple & quince, citric acidic, some wood, vanilla and straw notes. Medium bodied, soft carbonation, dry tart finish. Nicely drinkable.
