The base beer is a blend of 1-2 yrs old beers conditioned in ex red wine barrels. Before packaging, this blend spent 4 weeks on 225g/l of raspberries. Bright, funky, tart and with a beautiful raspberry jamminess - this Blend is fruity and complex yet refreshing to drink.
Most of our mixed fermentation beers have a similar base beer, which we are calling Simple Wheat Thing. It has pilsner malt, flaked wheat and wheat malt, to create a simple wort, which has low bitterness from moderate hopping.
It was fermented with our house yeast, as well as a range of other yeast and bacteria to create soft fruit aromas and gentle acidity. It was conditioned in oak barrels for 6-9 months, and different barrels blended to refine the balance. The fermentation character is evolving, but is not too dominant in the beers this year.
This creates a restrained base beer for the raspberries to shine. We used local Gloucestershire raspberries, which are super bright, bold and jammy. It was bottled in August 2020 and has spent the subsequent months conditioning, allowing the flavours to come together. This beer will keep for years, but we recommend drinking within 1 year to enjoy the intensity of the fruit.

Vivid pink appearance. Light on the palate. Finishes dry, with moderate but clean acidity.

ABV: 5.0%. Hazy - murky medium to light red colour with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, wheat, raspberry, tart raspberry, sweet raspberry, frozen raspberry, raspberry jam. Flavor is moderate sweet with a average to long duration, wheat, raspberry, tart, jam - raspberry jam, vinous, frozen raspberry. Body is medium, texture is oily to watery, carbonation is soft. Panda 🐼 at home thanks to Dave. A clear pink rose gold colourd pour with a small pinkish head that fades. Flavour is composed of nice fresh rose, petal, apple, blackberry, fresh and tangy. Flavour is composed of sharp tangy and prickly, berries, blackberries, lemon rind, mellow mouldy funk. Palate is semi sweet, sharp, mild pucker, prickly carbonation. linging yogurty funk.

Panda at home, thanks to Dave, 01/10/22. Copper pour with a reddish tinge and a limited faint crimson cap that offers a touch of spotting. Nose is sharp red berry fruits, hedgerow, herb, straw, damp cloth, berry pips. Taste comprises jammy berry fruits, light acidic tickle, damp straw, barnyard notes, berry pips, raspberry compote, grains. Medium bodied, fine carbonation, semi drying close Solid jammy berry sour with a good puckering climax.

Huge pink foam, fast receding over clear carmosine red beer, not very carbonated. Raspberry, very intense and perfumey - bit caramel, suggesting huge sweetness. Way less sweet than suggested in the mouth - both some sugars and lots of acids from the fruit, getting even outspoken tart. Raspberries are obvious, ad less perfumey, more natural appearing than the nose. Unfortunately, apart from a faint rainwater touch, there's not much else here. Light body, even a bit watery. Not very carbonated, but refreshing. These days, we're used to better examples - even in the UK.

750ml bottle. Clear pinky red, pink tinted head. Aroma of raspberries, light oak. Taste of tart raspberries, sour, slightly funky, oaky, acidic. Medium body.
