Xibalba is our pumpkin ale, brewed with cacao nib, ancho, serrano, and habenaro chiles with fall spices. This version has been Bourbon barrel aged with ancho chiles, cacao nibs, vanilla and pumpkin spices.

Refrigerated 12.7 oz. brown bottle, bottled on September 19, 2017 poured into a glass. Clear dark brown with small beige. Aroma is bourbon, medium body, low carbonation, and little lacing. Taste bourbon, pumpkin, cocoa, nutmeg, and hot peppers.

Bourbon aroma. Flavor is a nice, balanced blend of bourbon, coffee stout, and chilies. Not overly strong on any of the flavors. Any pumpkin and spice flavors are subdued.

On tap at the beer temple. This is a lovely pumpkin ale. Not as much heat as I expected, but the flavour of the chilis is lovely. Pumpkin and spices intense but nothing is over the top. Bourbon is not intense but BA gives a nice roundness. Lovely!

Bottle sample at a tasting at troubles’ place. Thanks troubles. Brown. Bourbon, vanilla, caramel, chili, spices, some chocolate, alcohol, caramel, sweet, mildly hot finish.

Shared 12.7 oz. bottle. Bottled on 8/30/2016. Pours almost black with a short-lived tan head. Aroma of bourbon, chocolate, roast, and spice. Taste is bourbon, chocolate, spice, subtle chili pepper, oak, spice. Didn’t get much pumpkin flavor, but still a nice brew.

4 oz pour on draft at Spacebar. Dark brownish with light tan head. Aromas of whiskey, chocolate, spice. Tastes of whiskey, dark chocolate, light pumpkin, cocoa, light caramel, a little booze. Medium body with a dry finish.

OpPoured from bottle purchased at One Stop reddish brown with minimal head. Aromas of oak chocolate vanilla and chili. Taste is chocolate cocoa vanilla bourbon and spices. Interesting brew.
