Cryo Conditioned Sparkling Cider.

Pressed in late November to Co- ferment in barrel until dry, left un-racked to undergo malo lactic fermentation. At the same as this we froze Foxwhelp, Blenheim Orange and Ribston Pippin and then pressed these apple ice cubes to extract super sweet concentrated juice and let it ferment wild. We blended these ice cider components (still fermenting) with the co fermented barrel and bottled it to finish fermenting in July 2017.

The resultant cider is bone dry, with a fresh and racy carbonation. It’s also alive with yellow fruits and generous ripe tannins and the ice cider component has given it a wild herbal dimension that is thrilling and unusual.

Bottle. Beer Zoo. Gift off the missus. Clear gold. Very lively. Foam of white head is noisy and short lived. Baked apple, and tannins. And not a deal else. Taste is hard to describe, on account of the fact there isn’t any. Utterly drab and pointless. Really, there’s no point going on here. I’ve made cider way better than this, and I’ve no idea what I’m doing. Poor.

750ml bottle. Sparkling, orangey gold colour, short-lived fizzy white foam head and aroma of tangy apple, caramel hints. Taste is woody oaky juicy apple, vanilla, caramel, with tangy, funky notes and drying tannins. Medium bodied, spritzy carbonation, dry tangy oaky tannic finish. Very drinkable.
