The year 2017 in the Basque Country will be remembered for its historic harvest. The climatic conditions and the overlap with ‘the year of the apple’* have created a rare harmony between quantity and quality. The short winter and the mild start to spring sped up the maturation process and increased the percentage of sugars and yeasts. The resulting cider is fruitier, more explosive and longer-lasting.

Bottle shared at a meal with Sarah at Astarbe. A light hazed greenish gold coloured pour with a fading white head. Aroma is semi tart, tangy green apple, sour, pithy apple skin. Light floral on the nose.. Flavour is composed tart, mealy apple, green apple, light funk, green apple, nice.

Dorée, léger trouble, pas de col.
Arôme frais, pommes acerbes et vertes, pointe florale fraîche avec une petite touche rappelant le pot-pourri.
Palais est sec marqué, pommes vertes, acerbe tout au long, belle effervescence, sécheresse marquée presque poudreuse, fruité reste discret et un peu en retrait.

From a 75cl bottle at Acido Acida 2022, in Ferrara, Italy. Pours somehow hazy, blonde, with no foam. Aroma is apple and delicately funky. Body is average, with almost absent carbonation. Taste is delicately acidic. Final is average.

Bottle @Luppolo Station (Roma). Servita a caduta dall'alto. Dorata abbastanza limpida, schiuma leggera evanescente. Al naso note di mela annurca, leggero citrico, stalla, una nota vinosa. In bocca è acida medio-leggera, vinosa leggera, mela annurca, secca in chiusura. Corpo leggero, carbonazione medio-leggera. Gradevole.
