A medieval Honey Beer recipe remade for our modern times. We’ve certainly never tasted anything quite like this smoothly delicious cross between ale and mead made with raw and unfiltered local honey, supplied by beekeepers and apiaries from Greater Manchester. Pollen and floral notes of the region’s summer and autumn flowers are in the braggot, which was fermented with Belgian yeast. For extra measure, the smoked malt brewer Mark Welsby used in the fermentation is to invoke the chimney stacks of industrial Manchester and Salford. Great play is made, too, of the industrial back story of the River Irk Valley, from Runaway all the way up to Harpurhey, source of some of the honey.

330ml bottle bought at Manchester Art Gallery. Hazed dark apricot coloured body. Almost naked at the surface. Dotte spots on the glass. Dried fruity nose. hints of wood and earth. Honeyed sweet flavours with dried fruits, slightly smoked. Mead-like impression, not overly sweet though. Fair enough. Shared with Frau Eva. (Tromsø 18.05.2018).

Keg at tbyhe brewery. A mostly clear golden orange coloured pour with a fine white head. Aroma is sweet honey glazed ham, tcp, medicinal. Flavour is composed sweet brown sugars medicinal, salty, Meg.. Palate is is sweet, stocky, moderate carbonation, light jammy fruit, grape. Meh.

Manchester Beer Festival 2018. Dark amber and well smoked, but not overbearing. There's some honey sweetness involved.
