Double-Aged + Double-Barrelled + Double-Blended

After an initial period of ageing, with wild yeasts, we blend a batch of Modus Operandi, we then age this blend for a further 4 months in some exceptional Burgundy red wine barrels, hand-picked to be the perfect vessels for this beer.

As this is 'Beyond Modus' we blend in a couple of select beers from our barrel library. We think these add extra character, depth and complexity to the blend, to make it the finest barrel-aged beer we have achieved so far. We expect this beer to age very well for a number of years.

On tap at Vultures Lane. Pours very dark brown with a quickly disappearing head. Cranberry, burnt toast, molasses, raisins, wood, red wine poached pears, little pepperiness, little red wine vinegar, balsamic vinegar, cherry. Really big full body with a nice level of carbonation. Flavours and body both pop. Fantastic stuff.

Draft @ Malmö Öl & Whisky Festival 2017. Pours a black color with a small tan head. Has a fruity sour tart woody caramel aroma. Fruity sour woody wine and caramel flavor. Has a fruity malty sour woody wine and caramel finish.

Bottle at home, split with James, 05/05/17. Rich mahogany brown with reddish hues topped with a decent beige cap. Nose is light varnish, tarte fruit, funky red berry, wood must, oak, red grape tang. Taste comprises tannins, dried cherry skins, red wine barrel, light bourbon tickle, stoned fruits, funky oak. Medium bodied, fine carbonation, drying close with an acidic bite and puckering shimmer. Solid and complex sour red, both barrels pull together well.

On Tap in Le Sec Brewpub, Barcelona on 16th Jan 2017: a surprise to say the least! Deep red hue to the murky brown body, no head worthy of the title. Fairly sour in nature with a ’turning’ wine sort of feel to the flavouring and aroma. Not really my thing, but I hung in there and almost started to enjoy it towards the end of my glass. I can see why others might crave after such a beer, but I am still a traditionalist and bit conservative in my drinking habits.

Bottle from the dregs run delivery. Thanks Craig! Pours hazy red-brown. Aromas of light red wine, funk, faint chocolate. Taste is light sour, balsamic, wine, wood. Sour finish.

Bottle at craig’s. Pours deep brown, nose is balsamic, oak, caramel, taste is similar, dry finish, zesty.

Bottle at home.. Dark brown.. Thin tan lacing.. Dark brown chocolate roast.. Big funk.. Sour funk fruit.. Big red wine funk nose... Soft sweet funk
