Double-Aged + Double-Barrelled + Double-Blended

After an initial period of ageing, with wild yeasts, we blend a batch of Modus Operandi, we then age this blend for a further 4 months in some exceptional Burgundy red wine barrels, hand-picked to be the perfect vessels for this beer.

As this is 'Beyond Modus' we blend in a couple of select beers from our barrel library. We think these add extra character, depth and complexity to the blend, to make it the finest barrel-aged beer we have achieved so far. We expect this beer to age very well for a number of years.

750 ml bottle. 2016. nose is Felmish red with lots of oak and something kinda bretty and hay-like. Cherry, vinegar, red wine, vanilla, leather, dust. Complex and funky. Notes of caramel and chocolate too. Dark brown, slightly muddy, with lace. Very woody, nutty, funky, hay, cork, cherry, dark chocolate. Very tannic, woody, slightly harsh finish. Interesting as hell. Does is beat a Rodenbach GC? Not at all. Still, quite fun.

Backlog June 2019. Clear amber body under a medium sized beige head. Complex and nice aroma of malt, dry fruit, wood, red berries, mild acidity and vinous. Taste is nice and complex as well, sweet malt, soft caramel, dry fruit, red berries, balancing acidity, oak, red wine and slightly funky. Fine body and long lasting aftertaste. Great stuff.

Big fruity aroma with light sourness. Taste is good, pretty sour, cherry, red wine. Possibly a little unexciting but for once the original beer seems nice.

KØLF 140619. Dark brown color with a tan head. Aroma is sourness, vinous, fruit. Flavor is sourness, vinous, vinegar, fruit, oak, red wine, wood, cherries. Very nice beer.

Bottle shared with the KL Tasting Crew. Poured a hazy medium brown colour with a thin broken off white head. The aroma is yeasty, vinegar, molasses. The flavour is moderate sour, with a crisp, fresh, dry, vinous, oaky, balsamic vinegar, molasses palate. Medium to light bodied with soft carbonation.

[9/7/18] Draught at Beavertown Extravaganza 2018 in London. Day 1. Dark reddish brown. Vinegar, oak, funk, cobwebs, red fruits, sour, acidic, a bit of caramel, medium-bodied.

Bottle thanks to Danny. It pours deep red - brown with a decent tan head. The aroma is fresh, sweet, juicy, tangy, vinous, jammy berry and fruit compote. The taste is dry, tart, tangy, juicy, vinous, redcurrant, sherbet, plum, wet leaves, raspberry, spritzy, damp wood and good mouth - pucker with a dry, woody finish.. Medium body and fine carbonation. Nice. Red berry and vinous character. Tasty.
