After an initial period of ageing, with wild yeasts, we blend a batch of Modus Operandi, we then age this blend for a further 4 months in some exceptional Burgundy red wine barrels, hand-picked to be the perfect vessels for this beer.
As this is 'Beyond Modus' we blend in a couple of select beers from our barrel library. We think these add extra character, depth and complexity to the blend, to make it the finest barrel-aged beer we have achieved so far. We expect this beer to age very well for a number of years.

Bottle shared in Hackney / thanks to Danny. Pours red-brown with a small, creamy off-white head. Leathery berries in the nose, a little earth, toffee, cherry. Medium sweet flavour with nice acetic bite, salt, sweat, more leather. Full bodied with fine, massaging carbonation. Warming finish, good acetic bite, more leathery berries. Great complexity. Solid.

Tried at The barrel project. Bermondsey. Red wine colour with a hick off white head. Aroma fruity malts balsamic and cherry fruit. Taste big funky and sweet to sour balsamic vinegar. Rich deep body.

Bottle. Mitchell’s Wines, Sheffield. Clear, deep ruby red. Thin, fine, lasting, beige head. Nose has earthy balsamic. Wet wood. Red wine dregs. New leather. All smells great, but there’s a furniture polish thing going on that detracts a little. It’s fairly prominent, really. Taste has a balsamic sweetness, but is mostly tart, and fairly dry. Some acidity on the palate. A little slick and oily. Tart, balsamic, oakiness to finish. Weird, but not necessarily in a good way.

Nice fizzy mediumlasting head. Aroma is dry sour-ish fruity, oak, minerals, berry skin, mild vinegar, alcohol, bark, sour dark berries, grass, hay. Taste is dry sour-ish fruity, soda powder, mild vinegar, sour cherries, grass, berry skin, alcohol, sorrel, red currants. Medium bitterness, dry sour-ish fruity mouthfeel. Nice.

(Keg at Sori Taproom, 20171124) The beer poured black. No head. Aroma had berries, sweetness and wood. Palate was medium bodied and dry with medium carbonation. Flavours were tartness, berries, fruitiness, malts and bitterness. Aftertaste had tartness, berries and bitterness. A well done oud bruin with a twist.

75cl bottle @ monthly tasting, Chez Sophie, Oct 17, courtesy of Mike. Pours a deep reddish brown, small pale tan head. Big vibrant red berry, red wine aroma. Taste is extremely complex, smooth with an alluring complexion of sweet zesty, lightly tangy, balsamic, cherries, red berries with tannic red wine undertones. Hugely enjoyable. The tannic red wine presence seems to reign in the tangy flanders red character and smooth things out a bit. Seriously impressed with this.

Bottle during share; deep purple pour with a thin tan head, aroma has dark tart red fruits, taste has dark fruits quite vinous, some vanilla, some acidity.
