BVC was brewed in collaboration with our friend Doug Dozark of Cycle Brewing. On a hot July day in 2017, we thought the best thing to brew would be this huge stout. We wrote a recipe with 13 malts and 2 yeast strains and then aged it in Brandy barrels for 20 months before finishing it on Indonesian and Madagascar Vanilla Beans and fresh Cinnamon.

Rated at The Side Project Cellar. Smooth, spicy and slightly roasty with some vanilla, cinnamon, brandy apple oaky woodiness, hints of chocolate sauce and cocoa. Pretty balanced and complex.

On tap at Side Project Cellar. Black with some brownish head. Chocolate and cinnamon, fantastic blend of the two. Some vanilla and barrel. Medium+ sweetness. Bit syrupy. Oily. Full bodied.

750mL bottle at the Cellar, 2/18/24. Dark, plentiful mahogany highlights in an inky, viscous, headless liquid. Cinnamon still prevalent, though not dominant. Long toffee-accented dark chocolate with mild-to-moderate, floral vanilla and not too much brandy character. Maybe just a round, slight vinousness on the very end. It melds with the cinnamon very well. No booze. In the mouth it's super soft, lightly sticky, with a fair bit of cinnamon present. Mild vanilla and light caramel and milk chocolate tell of bygone malts. Everyone was worried if this had held up and indeed, at this point, no issues with oxidation or body. Plenty of body, yet based on reading older reviews, it looks like it's dried out marvelously. This is not too sweet in the least. Lingering wood, cinnamon, light vanilla and hints of fruity brandy character. While I still could see there being even less cinnamon, this is pretty reasonable.

Bottle shared. Thanks Adam! Pours a fairly rich, deep black with a small brown head that dissipates. Nice brandy forward nose with wood, cinnamon and dark chocolate brownie aromas. Smooth and decadent on the palate with more fudge batter and brandy without being overly sweet. Cinnamon kicks in on the finish and really pairs nicely with the brandy and chocolate. Decadent stuff as usual from SP.

Bottle thanks to Cory. Pours motor oil with small tan head that lasts. The aroma is strong cinnamon, brandy, oak, roast. Thick body, cinnamon, vanilla, roast, brandy, cocoa, nice sweetness, really enjoyed this.
