Our Fated Farmer Series is a landmark step toward realizing our foundational vision for Trillium: Build a place that intuitively celebrates the intersection of New England farming, agriculture, brewing, and integrated community experience. The grist of each of the dynamic Fated Farmer wild ales is set on the structure of Valley Malt and is barrel fermented in 500L puncheons with our Native New England Wild Culture and aged for 5-7 months, before refermenting on freshly harvested fruit.

Pouring a soft, pale yellow, the 2020 Vintage of Fated Farmer: Chardonnay offers a bouquet of gooseberry, peach, guava, and a limestone minerality. On the palate, a mild acid profile is complemented by a touch of sweetness. Easy-drinking and gentle, each sip finishes well-rounded and nuanced.

330ml bottle @ monthly tasting, Chez Sophie, July 23. Cheers Mark for this. Pours a misty gold, pure white head that recedes. White wine aroma. Soothing Chardonnay presence to taste alongside a nice wild character with a breezy acidity and a dry lactic close. Lovely sipper.

Bottle at Piccadilly, Bod. Has a clear straw colour with a small off-white head. Aroma of oak, vinegar, grapeskins, heather and lemon. The flavour is similar and is nice and dry. White wine undertones. Has a slick mouth feel, medium body and a soft bitterness. Well-balanced and fresh.

Fort Point draught, 8/27/21. Mildly hazy, bright canteloupe-to-brass. No head. Lovely mix of acids in the nose reminds of lambic. Grape isnt overrepresented and there's a delightful sulfur note to it on top of the other random mineral notes. Wow, this reminds me of early 2000s Cantillon. Lots of acid but lots of malt with a ton of sulfur. This is a bit more raw with the acidity but it's in the best company with that comparison. Chardonnay adds a bit more citrus and light grape juiciness while no alcohol or flaw is noted. Juicy and soft in the mouth. Dry and with a bit of acid on the end. I think the aroma is much more successful but the chardonnay notes and malty but attenuated texture are enjoyable. A bit of funk on the end though still a bit more raw/lingering/unbalanced acidity than I'd prefer.
