This addition to the Evolution series is quite different from the others. When we got our hands on Summit and Cascade hops grown in the Žatec region, the retro West Coast IPA immediately offered itself as an ideal beer style. Inspired by the legendary California IPAs, we added a little caramel malt and classic sugar to get a dry copper-colored IPA with a distinct bitter finish. The bags full of whole hop cones, which we used for dry hopping, provided the classic smell of orange and grapefruit, which we fell in love with the first American imports of artisanal beer many years ago.
