Bière de coupage is the method of blending old and new beer together. Young beer can give old beer new bounce or old beer can add extra complexity to a young brew. To explore this technique of time and taste we cut the same grisette three different ways. While two blends are still maturing, this beer is ready: a blend of two parts grisette to one part of a Berliner weisse aged in a red wine barrel.

0.375 l bottle from 'Drankgigant', bottled in September 2019. Hazy, golden with a thin, frothy, slowly diminishing, white head. Slightly sweetish, sourish, gently fruity, slightly vinous and a little funky aroma of lemon, rhubarb, oak, hay, some red wine and a touch of gooseberry. Quite sour, very fruity, slightly vinous and a little funky taste of lemon, rhubarb, oak, gooseberry and some red wine, followed by a medium long, fairly tart, gently woody-dry and a little funky finish. Thin to medium body, quite astringent and gently effervescent mouthfeel, soft to average carbonation. Nicely refreshing, pleasantly fruity, not too complex Sour. Very nice!

37.5cl Fles van Sterk. Troebel gouden kleur, witte kraag. Funk, Brett, hout, redelijk zuur, licht acetisch, citroen, meer hout, redelijk droog, zure finish, appels. Net als in #35 komt ook hier het rode wijn-vat niet echt naar voren, althans niet in de zin dat je rode wijn proeft. Degelijke sour.
