Onze Wild Mill Dark gerijpt op 8 maanden op oude vaten van het beroemde sherry huis Pedro Ximénez.

Hierdoor krijgt het bier een hele bijzondere zacht bittere smaak van rozijnen, vanille en vleugje citrus. Een donker bier van 11% wat je voor de beste smaakbeleving moet drinken op kamertemperatuur. Cheers!

Bottle. Pours deep mahogany with an off-white head. Nose is dried fruits, esters, vineous notes, light glue, quite held back all in all. Taste is lots of booze, some dark malts, maybe sherry as well, nutty notes. But mainly booze. Lots of it. The body is light, the carbonation is medium. I can see the good intentions, but the execution is not quite there.

Pours a deep dark ruby brown colour and a firm light beige head with fairly good retention. Aroma's: sweet spices, boozy, dried fruit. Retronasal: sweet, sweet spices (notably aniseed), dried fruit, drop, slightly boozy, port-like. Flavour is moderate sweet, light bitter. Alcohol is a bit sharp. Medium bodied. Finished light moderate bitter.

Bottle. Dark mahogany. Dried figs, palm sugar, raisins, apple, light herbal, stale coffee. Quite sweet, medium bitter. Quite strong carbonation. Not too much barrel, but this is pretty solid actually.

Beautiful deep red-mahogany beer with huge cream-tan head. Creamy nose, woody, plywood, dry chocolate or cacao powder, tannines. Tannines, wood, chocolate, bitter portwine, aniseed. Long dry aftertaste, featuring again cacao. Very well bodied, and pretty treacherous for its 11%. Strange - I tried it combined with cheese, which mage it harsh, sharp. Without the cheese the flavours appeared much more mellow.

Bottle. Brown pour. Aroma of sweet caramelised malt, raisin, figs, dates, caramel, vanilla and yeast esters. Taste has caramelised malt, yeast esters, raisin, figs, caramel, soft anise and some ripe red fruit. Not much PX to be found here, just a solid quad.

33 cl. bottle @ home, bought @ van Rooij, Culemborg. Dark brown with a beige head. Dark caramel aroma with dates, plums and raisins. Sweet taste with a full bitter sweet finish. Very nice Belgian abt-like beer.
