The basis for this beer is a RIS, short for Russian Imperial Stout, or a very heavy beer characterized by a dark color, high alcohol content and high bitterness. This beer was infused with ginger, chili peppers and coconut to give it an Oriental Thai undertone.

Stephanos of Constantinople, ca. 893, patrioarch of Constaninople, younger son of Emperor Basil of Macedonia and brother of Emperor Leo the Wise. Not to be confused with the Greek martyr Stefanus , whose feast day is celebrated on December 26, Boxing Day

25/XI/22 - 33cl bottle @ Mash of the Titans tasting, Gentse Biervereniging, BB: 28/V/22 (2022-1693)

Pretty clear dirty brown beer, big aery and slightly irregular beige head, pretty stable, non adhesive. Aroma: wow, bad, very dirty, yeasty, lemon grass, funky, some dried fruits, not very good. MF: very lively carbon, medium body. Taste: a bit oxidized, bitter roast, yeasty, a bit dirty, weird sourish touch, quite some coconut. Aftertaste: sweet touch, malty, yeasty, chocolate notes, bitter, coconut, spicy, ok.

Pours black, medium-large sized , creamy, tanned-to-mocha , rising head. Scent is roasty. Some earthy / herbal touch by the peppers, but not much of the coconut. Ginger provides a sharp edge, comparable with the pepper. Taste is full, roasty, intense on the herbal side of the pepper, but not overly spicy. Very roasty, even a tad ashy. Very Belgian typical imperial stout. Rather bitter. medium fullbodied. High carbo. Decent. Coconut provides a mild, 'sweet' touch but remains fairly low. Ginger works as a sharp edge which - to me - more intensifies the lesser qualities, rather than to create a better end result.
