Nooit eerder lieten we Lambiek voor een “VAT” productie in de foeder ouder worden dan 3 jaar. We beslisten om foeder N° 31 zijn gang te laten gaan en bottelden de lambiek na 4 en een half jaar rijping op dit eiken vat.
VAT 31 werd een delicate, zacht-fijne Oude Geuze. Hij kent een fijne pareling en aangename cognac-achtige neus. Het fluweelzachte maar toch stevige aroma met toetsen van abrikoos en nootjes wordt onderbouwd met een duidelijk eik karakter.
Gebrouwen op 30 november 2015, gebotteld op 14 mei 2020.

Foeder N° 31, een groot eiken vat, werd tussen 1905 en 1908 gebouwd door de firma Bodenheim uit Kassel (Duitsland). Hij kwam in 1919 in een Brusselse Lambiekbrouwerij terecht als onderdeel van een grote partij materiaal die naar België verstuurd werd als vergoeding voor “oorlogsschade '14-'18”. De foeder deed in deze oude lambiekbrouwerij dienst tot in 1988 en werd toen samen met een 20-tal foeders verkocht aan onze brouwerij.
Deze foeders werden in de eerste jaren ingezet voor de rijping van lambiek van 1 jaar voor Oude Geuze Boon. De foeders die de fijnste Lambiek leverden werden uiteindelijk vanaf 1992 gereserveerd voor de productie van Geuze Mariage Parfait, waaronder N° 31.
In 2008 was de foeder toe aan een grote revisie en werden er barstjes vastgesteld aan de onderzijde. In ons kuipersatelier werd de foeder in 2009 gedeeltelijk gedemonteerd en werden 12 duigen (de houten balken waaruit het vat is samengesteld) vervangen door nieuwe. Na de revisie combineerden we 2 werelden : de extra aroma’s toegevoegd door de nieuwe eik en de ondertussen 100 jaar oude microflora in de wand van het vat gaven ons telkens na 3 jaar rijping een bijzonder fijne Lambiek.
Op 30/11/2015 werd er voor het eerst Lambiek uit onze nieuwe brouwzaal op deze foeder afgevuld. Het resultaat was bijzonder. We beslisten dan ook om deze lambiek te reserveren voor deze speciale productie.

Bottled 14.05.2020. yellow hazy color, small white head. smells funky, earthy, bit sulphuric, grassy, tobacco, nice to very nice smell. full body, soft carbonation. tastes mellow, oak, tobacco, grassy, earthy, hay, flowery, light stone fruits. finishes rather balanced and a tad heavy with notes flowers, stone fruits and tobacco notes. nice, but overall rather heavy, lacks both spritziness and also complexity. good, but not the best vat I had, probably needs another year or two.

Bottle at Beermerchants Tap with Harry. Hazy dark gild colour. thick white head. floaters. smells divine. aroma that I absolutely love this is beer. love it. lemon subtle. easy drinking. sour but not overly so. some cream flavour. some wood some oak flavour. simply outstanding. beer of the day. farmyard. just so complex. so lemon curd.

Aroma has subtle notes of oak and vanilla. It's got a little funk and just a light sourness. Very supple, soft feel. There's a grainy sweetness and a touch of vanilla too. Nice to try a 4.5 year old gueuze.

375mL bottle, pours a hazy bright golden with a small white head. Aroma brings out musty barnyard funk, some leather, and light citrus. Flavour is full of barnyard funk, musty leather, and light citrus zest. Leathery, funky and zesty. Real nice blend here, with assertive carbonation that is very fitting. Excellent.

[4/22] Bottle. Deep gold with a dense white head. Aroma of old and Moroccan lemons, the laundry, brandy, cut flowers shortly before they give up. A lot of body for a geuze. And it's warming! Really quite a lot of brandy with citrus and damp laundry behind. Some almonds or apricot stones, then oak and a bit of zing at the end. Good now, suspect this might age well 15+ years. [7.8]
[3/25] Have a few of these. Some sherry joins the brandy. Mellow sourness, old lemons. This one has lost some carbonation but is otherwise still very good.

Beer tasting & B2B event hosted by Belgian Embassy in Croatia, thanks for the invite. Unclear orange, minimal head. Rustic sharper acidity, soft funky notes, grainy, vinous, an oxidised wine character. Bitter, lightly fruity, mineral, smooth, vinous flavour. Light body, sharp, strong, moderate finish.

Bottle from Belgium. Not aged much beyond buying. WELL, of course this is a fabulous beer as most serious geuzes are. It has a fantastic aroma, gold appearance with a fair amount of sediment. It had moments of brilliance, but I would say that it does not compete with Cantillon's base geuze so woudln't pay extra for this again.

Bottle. Finally, I got the chance to taste this much talked about lambic blend from Vat 31. First impression is how different it is from VAT 108, 79, 91, 110 etc. It’s funky, fruity, lemon, wood etc. like all of them, but the composition is quite different – my tasting companions for this session actually found this more challenging. I cannot quite put my finger on what separates this from the rest but it is quite different and after spending some time on it the conclusion is that I find it a lot dryer, without becoming noticeable sour, perhaps just a bit more bitter. Anyway, I like it a lot.
