今回の六味六色IPAシリーズでは「塩味」に焦点を当て、ホップと柑橘類の共通点や塩がそれぞれにどのような影響を与えるのかを探りました。

スウィーティーと柚子の果汁を使って醸造したIPAに国産の海塩を加えました。 2種の柑橘果汁を使用したIPAはグレープフルーツを思わせるフレーバーとゆずの香りに加え、オレンジ、グレープフルーツ、ライム、レモンなど、ホップ品種にも共通するフレーバーとアロマを醸し出しています。

海塩はこの全てをまとめる役割を果たします。 まず塩味は柑橘類のシャープな酸味を柔らかくしボディ感とコクを与えバランスをとります。それと同時に果皮やホップの苦味を抑え、甘味をより強調させる仕上がりに。今作はジューシーで非常に親しみやすいIPAになりました。

This installment of our Six Tastes IPA series focuses on “salty” by exploring the commonalities between hops and citrus fruit as well as how salt affects the perception of each.

The result is an IPA brewed with the juice of Oroblanco and Yuzu and dosed with domestic sea salt. The two citrus juices combine to create a flavor reminiscent of grapefruit and an aroma that is unmistakably Yuzu but with hints of orange, grapefruit, lime, and lemon, all flavors and aromas common to modern hop varieties.

The salt acts to bring this all together. First, it provides a feeling of body and fullness that balances the sharp acidity of the citrus fruits. At the same time, the salt helps to increase the perception of the sweetness by balancing their bitterness. The same effect applies to the hops, making this a very approachable and anything but bitter IPA.

Lots of salt in the texture and taste. Also tropical pineapple lilty goodness. Very unique! Quite drying. Peach and passion fruit maybe. Very confusing but nice I think.

Can from the brewery. Massive citrus fruit nose as it pours, yuzu, grapefruit, from juice and not hops obviously. Smells great but not much like an IPA. Very cloudy bright pastel gold with lace. Flavor is grapefruit and yuzu, yes it is salty. Very tasty and very crisp but I can't get much of the hops or malt. Kinda like a margarita. Rather bitter, somewhat pithy finish. A nice drink, would be great in summer, but as an IPA--or simply as a beer--I'm not sure I get it.

KBC’s latest release in their senses series KBC En Salt IPA 6% Murky orange gold with a huge citrus aroma. Medium to full bodied with lots of salty minerality and HUGE shikuwasa type citrus flavor. This msg of salt and citrus in this, very summery and perfect for a warm sunny spring day or a trip to the beach. The citrus on this is off the hook.
