A part of our red saison from 2019 was aged in a barrel that previously had only one batch of Cabernet Sauvignon wine. We boosted the already present microorganisms in the wood with a small addition of roeselare blend to ensure a more noticeable pH drop. The effect was as desired, with lovely notes of both lactic and acetic acid developing, and some brett esters and funk as well. Some wine character seeped into the beer as well, which alongside the woodiness really give this beer Flanders like complexity.

Bottled 750ml. -Courtesy of hrabren, shared with him & Marko, thanks! Unclear amber coloured, minimal off-white head, red grapes and light acetic nose. Fruity, red wine, notes of wood and touch of spices with sourish finish. Bit watery but ok.

Bottle, thanks Hrabren! Darker red-amber body, some off white head. Perfumey funky saison phenolics and overripe fruit, lightly earthy, dusty, dunno. Tastes... like a slightly diluted Flanders red, berries, red wine, light funk, sweetish malty touches., or, rather, sweetish fruity. Okay acetic touches, juicy slightly. I'm actually liking this, though, yeah, it definitely is a diluted Flanders red.
