Fermentation took place in white Burgundy barrels and ex-cider barrels from Ross-on-Wye Cider and Perry Company. The beer in the two cider barrels was amazingly soft and full bodied. The beer in the white Burgundy barrels was light and creamy, but with enough acidity to bring balance.
Raw heather honey from Heather Hills Farm in the Scottish Highlands was added just prior to bottling. This provided sugar for conditioning as well as trapping delicate, earthy aromatics in the bottle.

Bottle shared in CW - cheers to Dave. Pours unclear honey-gold with a tight, creamy white head. Lightly sweet, some salt, tangy citrus, pale wood, orange rind, mellow funk. Light to medium bodied with fine, massaging carbonation. Alan Ed finish, lightly woody, salty, citrus rind, grass. Nuanced, solid.

Bottle shared at the Columbus tasting 13/10/2022. Many thanks to Wingmane for this one. A hazed deep orange coloured pour with a frothy off white head. Aroma is salty sour, green pickle, lacto, salt, monster monst, Flavour is composed of sharp lime pickle, salt, medicinal. sharp lacto. Palate is sharp, mid pucker, highish powdery carbonation. Challenging.

Clear golden colour with quick fading head. Aroma and flavour have pleasant funkiness. Really dry and woody. Subtle citric apple. Growing tannins. Excellent.

Finally home, super delish oaky sweet honey apple funk. Maybe my favorite of the whole set off etre. Cider notes meet white grape and honey deliciousness balanced real nice

Bottle split from Mills online shop. Pours unclear deep golden with a frothy white head. Aroma: stewed apples, oak, cidery funk, hay. Taste: dry, light to moderate tart, fruity, light vinous, some minerality. Medium body with spritzy carbonation.

75cl Bottle. Thanks Alex. Pours hazy Golden with a White head. Minerally - almost salty, funky and dry. Wood - slight phenol.

Cloudy dark golden with a lasting white head. Aroma of apples, wood, hay and classic English cider funk. Dry, fruity flavour with a mineral touch.

Bottle. Mills online shop. Moderate haze on a gingery gold. Sturdy off white foam stays the course. Nose has baked dessert apple. Vinous oak. Twangy brett. Old hop leaf. Missus gets the honey, but I don’t. Taste is tart and quite dry. Decent quench of tang here. Beautiful mouthfeel is soft and massaging. Drinks so easy. Juicy and tart, with minimal acidity. Juicy and tart finish. Just another world class bottle of beer.
