Spon - 2 Year Blend : This is a blend of 1 & 2 year old spontaneously fermented beer. Inspired by the Lambic tradition & brewed with a turbid mash, long boil, aged hops & then cooled overnight in our coolship where it was naturally inoculated with native wild yeast & bacteria. Following the overnight cooling, this inoculated liquid was filled into rinsed & steamed neutral oak wine barrels where the beauty of spontaneous fermentation evolved over the months & years. The beer in your glass is a true wild ale. Absolute terroir. We hope you enjoy it.

37.5cl bottle at tasting. 19.11.2022. Poured clear golden in color. Funky nose, leathery and apricotty nose. Acidic, dry, notes of vinegar.

Vintage 2019. 375 ml bottle. Piwo kwasne, lekko metne, piana niewielka lub nawet zadna. Pachnie kwasnymi cytrusami i ukwaszona kapusta kiszona z targowiska, prosto z beczki. W smaku kapusta kwaszona, cytryny, limonki i inne kwasne klimaty, w tym beczka po dobrym chardonnay wyczuwalna. lekko tez octowe, ale nie za wiele, cialo spore. Dobre. Polecam

Clear copper blond to peach coloured beer, no head. Aroma: a bit funky, herbal, weird, soapy, wood notes, sour impression. MF: ok carbon, medium body. Taste: fruity, nice, a bit complex, very sourish. Aftertaste: fruity, peaches and apricot, very sourish, dry and fruity, good stuff!

Bottle. Hazy golden color with white head. Aroma is lemony, earthy, bright. Taste is lemony, grapefruit, red apples, mild tannins in the back. Mineraly mouthfeel with sparkly carbonation. A bit simple overall, but not bad!

Small white head, fast gone over bright if veiled yellow-orange beer. Sour nose, lemony, Bretts' jumble, citruspeel, bit of leathersoap, even some phenolic hints. Fresh lemony flavour, lemonrind, again very Bretty (and the right kind, at that). Slight sulphury hints. Misses still a bit complexity compared to a real gueuze, or even unblended lambic. Lipsmacking acidity, tart " á souhait ". Light body, thanks to acidthinning and light -burn. Excellent beer, indeed lambic-style, and almost worthy of the Pajottenland. IMHO, apart from missing 3 yr old lambic, I fear the basic beer has not the real fermentation cascade that Belgian brewers rely on.

Thnx to Bas ! Pours unclear yellowblonde. No real head. Scent is fairly malty, lactic acid, wet wood. Fairly light. Taste is sharp, tart, bit lactic, woody, mild diacetyl. very decent, but not comparable with the real geuze's, especially since this one is about double the price...
