A wild, but elegant farmhouse brewed with a large proportion of spelt and matured in wooden barrels for several months. Deeply fermented dry body with a strong aroma of white wine, a little bit of funk and a long finish.

Bottle 0.75l, four and half years aged. A bit cloudy, pale gold colored. AROMA- flowery, apple, lemon, mirabelles, herbal. FLAVOR- neutral to slightly sweet, moderately sour, lightly bitter, slightly sharp, apple, apricot, lemon, herbal finish. Fuller bodied.

Tap at BeerGeek. This does indeed have lots of white wine character, but also lots of funk. Cleanish though, hay, straw, a bit of barnyard, lots of flowers rather. Background wood. Med-high sourness, but nicely rounded, soft feeling. Med-light bitterness, light tartness and sweetness. Very easy drinking. Excellent overall.

Bottled 750ml. -Courtesy of and shared with Marko, thanks! Murky yellow coloured, medium sized white head, pleasant fruity nose with whiff of wood. Fruity, yeasty, light phenolic and touch of spices with some grapes in the finish. Quite strong carbonation.

0.75 l bottle from Prague. Thanks Marko for bringing this and leaving some for me to taste. Hazy orange, small head. Nice pleasant citrusy, zesty and funky aroma, spices, goaty, apricot showing up nicely, soft oak presence. Dry, fruity, slightly tart, nice soft stone fruit body, lots of apricot, some bitterness. Juicy, gentle, nice mild funky presence. Light fruity finish.

Bottle from somewhere. Shared with Ogi, Vran, probably Marko F. and Hrabren. Murky lemony body, off white head. Tart, fresh, light wood, estery pear touches, peppery phenolic notes, on point really, vinuous somewhat. Fairly full body, lightly tart, pear and citric touches, light white wine, light light wood, dry, drier very, very well made saison.
