The Bianca series is where we fully explore the tart flavor spectrum and what a lactose infused sour beer can be. In the peach rendition, we have worked together with our beloved friend Chad Yakobsen at Crooked Stave, an actual doctor of brett, to find just the right tart, funky and earthy flavour profile to balance the peaches and raspberries.

Draught@Craft Beer Helsinki 2018. Hazy yellow colour, not much head. Aroma is yeast, some fruits, wheat, and mild herbal notes. Flavour is slightly tart with some spicy yeast, mild fruity, wheaty and erbal tones.

Bottle at a tasting, thanks to DannyHill. Thin body, moderate carbonation. Quite high sourness, over the top, lots of both acetic and lactic character. Loads of horsey sweat. Hard to drink to be honest. Not very complex, just intense.

Pretty sour at first, which goes into lightly tart peach candy very fast. Lots of peach, pretty sweet. Just a bit of wood. Great balance between sour, woody and sweet. So much peach, absolutely delicious. Zure perziken beer.

(375ml bottle from Omnipollo Webshop) Pours lightly hazed deep gold with a small stable white ring and some spotty lace. Aroma of preserved peach, peach yoghurt, lemon juice, candy sugar, acidic white wine, moderate hay and horseblanket, maybe a bit of wood. Flavour is rather high in acidity with light sweetness, fresh and canned peaches, tart yoghurt, lemon juice, light acetic acid, fruit skins, touch of musky funk, quite fruity into the finish. Medium body and low carbonation. Nice peach character, quite acidic despite lactose, and not the most complex by CS standards. Solid.
