For this Druif, we used the Morio Muscat variety, which is a cross between Silvaner and Pinot Blanc (or maybe Muscat Blanc à Petit Grains, but this needs yet to be proven). Originally from the Palatinate region in Germany, this variety’s popularity was peaking in the nineties. Wijndomein Hoenshof was nice enough to harvest some of it for us.
We destemmed the grapes in-house and we put the must for almost four months on a gentle young lambik before blending and bottling. Final fruit intensity is 392 grams of grape must per litre of Druif. One third of the lambik that was used was brewed with our own cereals from in and around the Pajottenland. 100% 3 Fonteinen.

Tart, funky and zesty with some vinous grapes, hints of plums, sweetness and mild sourness. Pretty good and complex -

One of many, many Twists of Fate, with muscat grapes (which I believe were the original grapes used in grape lambic); bottle from Lambik-O-Droom, cellared for about a year and a half. Thin and loosê-bubbled, open, off-white 'head' quickly dissolving into nothing; initially clear, deep old golden robe with pale orangey glow, misty with sediment and a bit cloudy and beige-tinged in the end. Aroma of dried grape skins and grape seeds, dry hay, strong old wood, peach kernels, old dry cheese rind, grape must, old teabags, wrinkled old apples, cracked leather, 'horseblanket', dry earth. Tart onset, dryingly fruity in an acidic but also juicy and refreshing way, old lemons, wild apples and grape skins, medium carbonated; lemony sourness accompanies a vinous, bit astringent body, with a bready core deeply buried under strong grape skin, grape seed and wood tannins, with tea- and mandarin-like accents in the finish. Dry and a tad astringent but still retaining juiciness, with more sweetish grape juice in the tail, albeit subtle. Tart, tannic and dry, but also fruity and refreshing; quite complex, perhaps a bit less juicy than expected, but all the more interesting for it.

Flaska från 3F, blend 14 20 - 21. Orangefärgad, nästan ingen krona. Låg kolsyra. Sockrigt söt i doften med mycket druvmust, fruktiga toner, aprikos. Mjuk kropp, nästan ingen kolsyra, ganska skarp syra, smaken mycket på ytan. I eftersmaken samma sockeraktiga/fruktiga sötma som i doften, hänger kvar.

Bottle, 750 ml at Lambikodroom OBD. Shared with Hrvoje and Tin. Fruity, intensive muscat grapes, vinous, juicy, funky. Soft texture. Quite sour, but still pleasant.

Pours darker, unclear yellowblonde. Small white head. Scent is full, juicy, intense grapes. Very perfumy. Taste is full, juicy grape character. Dry, oaky, acidic, pefumy. Quite enjoyable. Funky grape lambic. Quite dry, tad acetic. Oaky, dry, funky finish with a perfumy grape aroma.

0,75l bottle at the Lambic-O-Droom. yellow rather hazy color,small white head.smells funky, sulphur, white grapes, baby diaper, light stone fruits, citric, grass. nice smell. full body, soft carbonation. tastes citric, grapefruit, grassy, earthy, oak, white wine, stone fruits, bit peachy. finishes dry and lightly sour with notes of peaches, grapefruit and some peppery notes. very nice one, but taste is quite intense, not very grape forward, rather peachy and citrus forward

Bottle at OBD. Pours a cloudy orange with small white head that lasts. The aroma is grape must, wood, funk, barnyard. Slick body, tart grape, citrus, wood, light funk, very good.
