In the search for excellent grapes and varieties, we also started looking into prime regions and primal terroirs. For this Riesling, we found ourselves in the heart of Rheinhessen, Germany. We sourced a few hundred kilos of Riesling grapes with Harth+Harth, an ecological and organic family winery in Saulheim.

We destemmed the grapes in-house and put the must on a gentle, young lambik on an ex-Bordeaux oak barrel. Then, we let it macerate for three and half months before blending with a tad young lambik and bottling this grape lambik (we lost 50% due to human error). One third of the lambik volume is also brewed with our own cereals from in and around the Pajottenland. The final fruit intensity is at 632 grams of grapes per litre of finished Druif. 100% 3 Fonteinen.

Bottle pour at LKBW 2022. Cloudy golden with small white head. Heavy vinous notes, funky, musty, white grapes. Medium sourness.

LKBW22. Bottle. Hazy golden, medium head. Funky aroma, apricot, orange, white grapes, goaty, carboard. Fruity flavour, sitrusy and stone fruit dominate. Soft texture, oily, moderate sourness.

Bottle, LKBW. Slightly hazy amber, smaller white head, nonlasting. Smelly rubbery nose, wine - not unpleasant though. Modertely vinous, not too sour, tart finish. Light body. Not bad.

I lost count of how many of these Twist of Fate 3 Fonteinen has churned out meanwhile but they remain as exciting as ever; it was only a matter of time before Riesling grapes would make their appearance I guess, this time harvested from an organic Riesling farmer in Germany. Thanks Bart! Open, snow white, moussy ‘ring’ on an initially clear, warm apricot-golden beer turning misty and more peachy-orangey with sediment. Aroma initially with quite some ‘puttekenslucht’ (sewer water, rotting plant material) but this fades gradually, making room for much more flattering impressions of grape skins, grape seed oil, damp haystack, mown lawn, farmland, wet clay, cheese rind, green weeds and eventually – warming up – sweet fruity notes, but more reminiscent of peach and white raspberry than actual grapes. Colourful, quite intense onset, juicy white grapes now much more apparent, whitecurrant, hard pear and even unripe pineapple somewhere, very vividly carbonated in a crisp, ‘crystalline’ way; rounded, bit vinous mouthfeel, bready core buried under layers of lactic and other sourness, white fruit sweet-and-sourness, minerality and tannic effects of both wood and grape skins. The grape flesh maintains a juicy aspect, but not as much so as in many other grape lambics I had – even in comparison with the only other Riesling lambic that springs to mind, Tilquin Oude Riesling à l’Ancienne, which I recall was juicier, softer and fleshier. That said, this 3 Fonteinen interpretation is still an interesting, multi-sided lambic worth trying – I can even forgive that ‘putteke’ aspect from the beginning.

Rhoihesselambik! With grapes from Saulheim! Lovely. Riesling aromas definitely present.

Pours unclear, darker muddy blonde. Scent is full, funky, brett, dry, oak. Natural wine-like. Not as smooth as I had hoped. Taste is full, chewy grapes, natural wine like again (brett, sharp) . I had higher expectations of this one. Far less balances and refined than the Tilquin version (and I usually strongly prefer 3F over Tilquin) . Very robust, raw, green, earthy.

Taster from 0,75l bottle at the Lambic O Droom. orange hazy color, small white head. smells spices, grapes, tannins, some oak, peppery. very nice smell. full body, soft carbonation. tastes citric, grassy, white grapes, peppery, light sweetness, some tannins. finnishes dry and lightly sour with notes of white grapes, tannins and oak notes. very nice one, bit heavy, but overall very good.

Bottle at OBD. Pours golden with small white head that diminishes to nothing. The aroma is white grape, funk, wood. Light body, white grape must, light funk, oak, nice tartness, very good.
