Japan boasts one of the most exciting but complex cultures in the world. From the bright neon lights and bustling streets of Tokyo to the temples, gardens and relative peace of Kyoto, this beer captures that complexity. Brewed with Konbu seaweed, satsuma peel, flaked rice & sea salt. Temple is a very light and dry sour beer with prominent salt, citrus character and subtle umami.

Keg at Fourpure, 02/08/18. Hazed yellow golden with a decent off white covering. Nose is tangy citric peel, light funk, damp hay, wood must. Taste comprises lemon tinged straw, damp cloth, green berry must, mellow acidity. Medium bodied, fine carbonation, semi drying close with a balanced puckering schmack. Decent.

Tap. Hazy golden color with white head. Aroma is salt, dough, very salty, light citrus. Taste is salty, dough, mineralic, wheat, candy malts, seaweed, almost Belgian candy malt below. Dusty mouthfeel with medium carbonation. Not great.

Tasting glass @ Billie’s Bier Kafétaria. Hazy orange citrus, creamy white. Nose is far too salty, salty energy drink, basic kettle sour. Taste is salty lime, vomit, stomach acid & way too much salt & energy drink. Salty lime & vomit gose body, not the greatest.

Gose with Japanese mandarin peel, rice flakes, seaweed and sea salt, an attempt at linking this ur-German style with Japanese culture, from tap at Billie's Bierkafetaria during the Fourpure tap takeover. Papery lacing, frothy, snow white, moussy head, cloudy yolk yellow blonde robe with olive greenish tinge. Aroma unfortunately suffering from very outspoken DMS (overcooked white cabbage), next to soap, spoiled cucumber, fresh green seaweed, Sauerkraut, yoghurt, chalk, raw potatoes, citrus peel. Crisp, tart onset, zesty hint from the Japanese mandarin peel, softish carbonation, soapy wheatiness with an ongoing chalky note through the entire palate, white bready aspect, some saltiness at the edges but relatively subtly so, lactic tartness, spicy aspect in the finish. Interesting idea, but I didn't really get a Japanese feel from it and the DMS bothered me too much to fully enjoy it. Have a point for originality, though.

Draught @ Mig & Ølsnedkeren. Pours slightly hazy yellow with a white head. Aroma of wheat, light sour, little salt, light sour milk, light citrus, lemon. Flavor is light sour, wheat, salt, citrus, lemon juice/peel. Medium body, soft to average carbonation, light sour finish. 070718

Keg at the brewery tap. A light hazed yellow golden coloured pour with a a fine white head. Aroma is sweet vanilla, apricot cream, bit weird, Flavour is composed of sweet salty milk, apricot. But milky cheesy sour, pithy lemon.. Palate is tangy, semi sweet, moderate carbonation prickly carbonation. Not great.

Keg tab the brewery taproom. Pours clear yellow gold with a foamy white head. Subtly buttery, some ripening lemon, salt, wheat bread. Light bodied with fine carbonation. Sweet finish, doughy and lightly buttery, more salty notes. So so.
