Japan boasts one of the most exciting but complex cultures in the world. From the bright neon lights and bustling streets of Tokyo to the temples, gardens and relative peace of Kyoto, this beer captures that complexity. Brewed with Konbu seaweed, satsuma peel, flaked rice & sea salt. Temple is a very light and dry sour beer with prominent salt, citrus character and subtle umami.

Lots of mikan and happily no seaweed! Bit salty at the end. Points off for four pure.

Tap at Brody’s. Hazy pale straw with small white head. Lots of sour lemon, dishwashing liquid, maybe some seaweed indeed, light wheat, vitamin C tablets. Very sour, light bitter. Over light bodied with dry feel.

Sample tray, draught at Fourpure Taproom. Cloudy grey-orange coloured body, dissipating chalk white head, spotty lacing. Modest smell of ripe lemon. Lemony tartness to the taste buds. Tart and sweet ending. Okay cleanser. (Shared with Finn, Bermondsey, London 29.09.2018).

Can big thanks to my Bro. It pours cloudy golden to orange with a small white head. The aroma is earthy, savoury, green, seaweed, wet foliage, wet grass, damp wood and some orangey citrus. The taste is crisp, dry, tart, bright, good mouth - pucker, zingy, zesty satsuma, kumquat, orangina, some acidity, salty, minerals, juicy, not much seaweed, perhaps something like wet grass and earth. Finish is dry and zingy. Medium body and fine, foamy carbonation. Not sold on the aroma, but it tastes bright and zingy. Fun stuff.
